Karl’s Salt and Pepper Mushrooms

My family loves salt and pepper chicken wings. I wondered if I could make a vegetarian version with meaty tasting mushrooms. Daughter Miriam would love it— daughter Eilene won’t touch it.

Karl’s Shiitake Green Beans

Broiled salmon with ginger peach glaze has become a standard weekday meal at my house. The question is what vegetable do I serve with it this meal. Frequently that choice is broccoli, but wife Jan has not been well and broccoli is a bit hard to digest. Jan decided that she could handle green beans, but plain steamed beans is a bit boring. Jan has already decided that she is having no difficulties with mushrooms, so off I went on a spur of the moment creation for two.

Karl’s Grilled Ponzu Shiitaki Mushrooms

I made a Japanese feast for Sunday’s dinner. Miriam had requested that it be a vegetable forward and a low sugar meal.  Japanese dishes seem to have a lot of added sugar, but I could work with that.

Karl’s California Fusion Grilled Shiitaki Mushrooms

I had originally planned to make this as a mushroom and green bean dish. I decided to make it as two dishes to please Eilene, who does not like mushrooms. Since I was already grilling my ghost pepper chicken, grilled shiitaki mushrooms was an easy pick.

Karl’s Shrimp and Scallop Udon Soup

The usual quandary of what will I make for dinner tonight? I have been looking at several Japanese cookbooks and I started craving udon soup. Thinking about what ingredients I had in my kitchen, I decided on a seafood udon soup.

Japanese Bar Style Shiitaki and Sesame Skewers

Last week, Jan and I went over the hill to Santa Cruz to visit her “new” brother. While we were there, we stopped by a large book store that was going out of business. The cookbook section was fairly picked over, but as I was perusing the fiction section I found a book Izakaya: Japanese Bar food—someone had obviously picked it up and then changed their mind, leaving it “where ever.” Their loss, my gain. This Sunday, I decided to make a Japanese bar style dinner.

Karl’s Mushroom and Barley Soup

Jan really liked the last mushroom soup I made. She asked for a soup just for the two of us, Eilene—who hates mushrooms—was off on an overnight. Reworking that recipe actually improved it quite a bit.

Karl’s Five Mushroom Soup

I have been craving oxtails recently. You may wonder what does “oxtail” have to do with “mushroom” soup. It all comes down to my wife’s, Jan’s, gallbladder—or rather the lack of the same.

Karl’s Asian Mushroom and Wild Rice Soup

Adapted from an Americas Test Kitchen recipe

I am incapable of following a recipe, even my own. I know that the chefs at ATK have spent days perfecting their recipe, but I have to make changes. I cannot help myself—I watch cooking shows more for tips and techniques, rather than instructions.
