Karl’s Herb & Chive Mashed Potatoes For Burning Man

Wife Jan is going off to Burning Man again. Last year she broke her arm, I hope she comes back in one piece this year. As usual, I am making instant meals for her group. Last year, I made three camp meals—saag pilau, za’atar orzo, and pancakes. This year I added two more—mashed potatoes and tabbouleh. Dehydrated potatoes are pretty bland just on their own, but a few herbs, some chives, powdered cream and butter should work wonders.

Karl’s Mashed Potatoes with Chives and Chicken Gravy

I am making a “festival meal” for one of Jan’s Chinese students with a roasted chicken. Mashed potatoes and gravy is a “must” side dish. For Thanksgiving I made these potatoes with turkey gravy, here I am making it with chicken gravy.

I had originally planned on making scalloped Russet potatoes and mashed sweet potatoes for this year’s Thanksgiving meal. My wife said, “It is not Thanksgiving without mashed potatoes! A quick shuffle and I did it the other way.

Jan just had two temporary crowns put in and is eating soft food. While she had smoothies and blended Fishyssoise the first days, she wanted something more substantial by the third day. The last time she had a crown put in, I made her Shepherd’s Minced Pie.

Karl’s Sweet Potato Mash

I am making a Southern-ish buttermilk roast chicken, this kind of main dish calls for a sweet potato side. I could have done just a simple roast potato, but I decided spice up a mash. The question is, of course, what spices? Today, I chose ginger, cinnamon, allspice and nutmeg.

Karl’s Mashed Yams

Yams go very well with ham.  They also cook much more quickly than regular potatoes. This makes them perfect for my time-delayed dinner. We are going out to a movie and I need to do the prep before we go, but have everything pulled together quickly after we get back.
