Hushpuppies are a Southern fried cornbread. Many recipes call for self-rising flour (both corn and wheat). These are not always available, but they are easy to make.

Karl’s Veracruz-style Fish Taco Spice Blend II
I thought I would change up the seasoning for my fish tacos. I found some guajillo ground chili. I added that to the mix as well as some coriander seeds. I also decided to eliminate the non-Mexican Indian chili powder.
Note: If you are a Vegan this would go well on grilled tofu or tempe.

Karl’s Ultimate Micro Orange Marmalade with Meyer Lemon
Every Christmas for more than the last decade I have made marmalade as a giveaway. I would make 40-60 twelve ounce jars at a time. It always takes several days to process and cook all of that jam.

Karl’s Rotkohl II
I want to make Charlie B’s tomorrow. This is a leftover breakfast, but to make it you kind of have to have the leftovers. I already had the potatoes, but I needed the sausage. That meant bratwurst for dinner tonight.

Karl’s Steamed Artichokes with Lime, Chive and Dill Sauce
Ingredients
1 Lime
2 tsp. Fresh chives, chopped fine
1 tsp. Fresh or dried dill
Pinch Salt
4-5 Tbs. Mayonnaise
3-4 Artichokes
½ Lemon
Directions
1. Mix first 5 ingredients well and refrigerate until serving.
2. Trim and halve artichokes. Rub cut surfaces with the lemon to prevent them from turning brown. Steam the artichokes, until a knife slides into the thickest part of the cap easily, 15 – 20 minutes.
3. Serve with sauce on the side.

Karl’s Quick Pickled Japanese Cucumbers
I forgot to start the pickles I was planning to make the day before, so I wanted to come up with a faster way to make Japanese cucumber pickles. I decided to use the technique of Persian hot pickles, heating the pickling liquid and the cucumbers to speed up the process. They came out very much like my favorite cucumber pickles from Gombei.
