Karl’s Thanksgiving Stuffing II

My Thanksgiving stuffing is based on my mother’ s dressing. I may play around with the other sides and how I cook the turkey, but this is something that I always make very close to the same way each year.   I have made many improvements on my mother’s recipe over the years, but this—more than the turkey—says, “Thanksgiving” to me.

Claudia’s Poultry Dressing

When I left home I copied out my favorite recipes from my mother’s card file. These recipes were limited to what she could fit onto a 3×5 card. They were meant more to remind her how to make a dish, rather than to instruct someone else on how to make them. They were sometimes quite cryptic to the uninitiated. Claudia’s Cheese Strada

Before I left home for the first time, I sat down with my mother’s recipe box and wrote down my favorite dishes.  I have referenced  my mother’s strada before, but I did not post the original recipe. Today I am posting another variation, so I thought I would put up Claudia’s family recipe. My memory is she was making this in the Fifties, long before it became a fashionable dish in the Seventies. Claudia’s Chili

Before I left home for the first time, I sat down with my mother’s recipe box and wrote down my favorite dishes.  As I was making my chili California I had thought about using my mother’s recipe. I took it out and looked it over. I was surprised to find that it did not actually include any “chile.” I remember loving my mother’s “chili” as a child, but I am not sure I can call it “chili” any more—it was more of a German beef and beans. Karl’s Cola de Buey en Chile Rojo (Oxtails in Red Chile Sauce)

I am making chili beans for Jan, but son-in-law Chris, is on a super low starch diet. I decided that I would make a beef chile for him (OK, it is for me too, I admit it). Normally I would use beef chuck for making carne con chili rojo. However, Chris really likes oxtail and I think this would go really well. For some reason, my recipe for Moroccan Oxtail is one of the most popular pages on my blog, so I do not think he is alone in this preference.

Eilene is having friends over tonight and one of them is a picky eater. If it is not Vietnamese or sweet she will not like it. I would make pho, but it takes a long time to make the stock. Jan suggested that she would like chicken teriyaki.

Karl’s Chicken Teriyaki

When I was leaving home as a youth, this is one of the first recipes I copied out of my mother’s card file. When Dad returned from Japan in the early ‘50s, he brought back a love of all things Japanese and many Japanese recipes. Mother was making chicken teriyaki when it was still an exotic foreign food in California. When most American families were getting hamburgers and hotdogs, we were getting chicken teriyaki and rice once a week. This is one of the comfort foods of my youth.
