A friend of Jan’s, Heidi, gave us a jar of wild plum sauce and Jan asked me to think up a dinner to go with it. Jan does not particularly like duck, so the most obvious use—Peking Duck—was right out. As I was reading a Chinese menu, I saw “lettuce cups with plum sauce” and that gave me an idea for a California Fusion Asian pork “taco.”

I, and my family, do not listen to NPR radio when we are at home, only when we are driving. As we listen to the shows, there are frequently little bits of factoids that must be shared with the rest of the family, usually over dinner. Those conversations always start, “Driving along listening to NPR….”
I am still trying to adapt to the combination of low fat and Ketogenic diets of my family. This Sunday I am posting two closely related recipes. This is the original recipe made with Hoisin sauce and sweet chili sauce, both of which have added sugar. I am going to adapt this recipe to be more in keeping with a Ketogenic diet in my second recipe.
Lettuce cups are very much in keeping with a Ketogenic diet, high protein and leafy greens. The problem with the original recipe is the Hoisin and sweet chili sauces, both of which have added sugar. Hoisin sauce is mostly bean paste with sugar and Chinese Five Spice added. I will make a keto hoisin sauce by leaving the sugar out. I will replace the sweetened chili sauce with a sugar free chili garlic sauce.
