This meal started with my wife Jan noticing that I had a ripe avocado on the counter. “We should have tacos, hmm, grilled shrimp tacos,” says she. I know that she is also very fond of grilled corn, so I suggested grilled corn salsa to go with the tacos. Thus a meal was born.

It is always a challenge to decide what to make for Christmas Eve dinner. I have done lamb, crab & lobster bisque, and last year I made tamales—since Jan discovered that she is a quarter Cora, we have been trending toward Mexican cuisine in our Christmas celebrations. This year, Miriam asked for tri-tip tacos—and tacos call out for beans.
Tacos are a favorite meal around my house. I usually make some version once a week—although rarely on Tuesday. Jan had brought some ghost pepper products back from a trip to Monterey, one of which was Jolikia Hot Chocolate mix from the Pepper Palace. I decided to try using it in a taco dish—chocolate and chilies is a traditional Mexican combination.
For weekday meals I sometimes take shortcuts, like buying pre-seasoned meat from an ethnic market. Being Californians, tacos are very popular in my house, but when I take short cuts I usually do not post about it. However, this one has been requested. If you happen to have a Hispanic market near you, like Chavez Market, these tacos are worth a few short cuts.
A friend of Jan’s, Heidi, gave us a jar of wild plum sauce and Jan asked me to think up a dinner to go with it. Jan does not particularly like duck, so the most obvious use—Peking Duck—was right out. As I was reading a Chinese menu, I saw “lettuce cups with plum sauce” and that gave me an idea for a California Fusion Asian pork “taco.”
