Eilene requested carrot salad and some kind of green thing as the vegetable to go with the chili dogs for her birthday meal. I had bought a bottle of Champaign vinegar for another meal a few weeks ago and that seemed like a likely place to start. Thinking about what herbs and spices would compliment this rather expensive ingredient, I started grabbing bottles out of my spice rack. This is what I came up with. Giving the carrots a bit of time to pickle a bit also seemed like an obvious idea.

Karl’s Chicken Florentine
I am finally getting around to posting the meal I served Jan’s childhood friends last Saturday. This is basically my noodles Florentine recipe with meat added. While this is a dish is a meal in a bowl, I served it with a side of steamed broccolini.

Karl’s Noodles Florentine
I wanted a vegetable/starch side dish to go with my baked salmon. Lately, I have been making dishes with noodles in white sauce for Jan and Eilene. Today, I decided to make it a green sauce.

Karl’s Zatar Spinach Israeli Couscous
Jan suggested Israeli couscous as the starch dish to go with my Easter lamb. Ptitim, or “Ben-Gurion rice,” has only a nodding acquaintance with the fine grained couscous of the rest of the Middle East. It was created in the early years of the nation of Israel as a rice substitute.

Karl’s Three Course Ham and Beans
I had defrosted one of my ham steaks for a meal that ended up not happening this Sunday. I do not want to re-freeze it, so I must think of a dish to make with it. Jan, who is just coming off a soft food diet, suggested ham and beans. Real food, but soft enough not to disturb her healing oral surgery.

Karl’s Orange and Pear Spinach Salad with Lime Vinaigrette
I decided that I needed some greens to go with my salmon and soup that I am serving to my sister. A spinach salad seemed like a good idea, but plain leaves and dressing did not seem like enough. I have been doing a lot of cooking lately and I have several “left over ingredients” on hand.

Karl’s Palak Paneer
From my research on the web I understand that the difference between Palak and Saag Paneer is that if you only use only spinach it is a Palak and if you use a mixture of greens it is a Saag. When people come to Silicon Valley, they bring their food with them. As Californians we often feel it necessary to mash these recipes up with other cuisines. Today, I am doing an Indian shepherd’s pie, a mash up of Indian and English cuisines. I am thinking of making my palak a bit more French by adding wine.

Karl’s Sloppy Jodhs
To add to the dietary restrictions for this week, Myr was just put on a “soft food diet.” This week’s recipes must be: low(er) fat, low carb, and soft foods. She suggested something like Sloppy Joes.

Karl’s Kalmi Saag Paneer
I went to the Indian market looking for fresh methi leaves, but was told they didn’t have any because it was summer. I had picked up something called “green leaf,” which I was told was very good. Although it looked familiar I didn’t recognize it. I am always one to try something I have not tried before.
Note: I am still not sure that this is water spinach. If anyone out there knows by what other name the Indians call “green leaf” I would appreciate knowing.

Karl’s Vegetarian Lasagna
Adapted from a Cook’s Illustrated recipe
A friend of ours had a reoccurrence of her cancer, an all too familiar event in our lives. She is so sick that it is hard for her to cook, so I am making one of my mitzvah lasagnas. When a person is on chemo they tend not to be concerned with eating. I unfortunately know this from personal experience. This dish is designed to tempt you into eating at least a bite or two to keep body and soul together.
