What is a Thanksgiving turkey without the sauce? Jan read recently that while many of the ingredients of an American Thanksgiving feast had a New World origin, the culinary aesthetic was definitely Old World.  The serving a tart fruit sauce with greasy roasted meats comes straight from the (European) Middle Ages.

Karl’s Pumpkin Pie with Grand Marnier Whipped Cream

What is a Thanksgiving feast without pumpkin pie? Although I recently made a similar pie for Jan’s new brother, there is always room for improvement. I found real pumpkin for this one and I decided to stir in the crystallized ginger, instead if just sprinkling it on top.

We were meeting at a friend of Jan’s place for lunch to be introduced to her new half brother—long story, but the friend has know him for most of her life and Jan first found out about him two months ago. My job was to bring the bread and dessert, I decided on pumpkin pie without the crust.

Karl’s Thanksgiving Orange and Sage Roast Turkey

My original plan for this year was to get a small turkey (10 pounds) and to spatchcock it. I was planning to lay the turkey over the dressing so that the turkey juices would drip onto the stuffing. However, for the second year in a row, Whole Foods got my Kosher turkey order wrong. I still got a turkey, but it was 16 pounds—way too big to lay over the pan if I opened it up. I would have to go with a more traditional approach.

Karl’s Thanksgiving Stuffing II

My Thanksgiving stuffing is based on my mother’ s dressing. I may play around with the other sides and how I cook the turkey, but this is something that I always make very close to the same way each year.   I have made many improvements on my mother’s recipe over the years, but this—more than the turkey—says, “Thanksgiving” to me.

Karl’s Weekday Thanksgiving with Dried Cranberry Sauce

Jan really loves turkey and she has been running her legs off at work (literally, yesterday she walked 7 miles back and forth across campus, as recorded by her Fitbit). I decided to surprise her tonight with roasted turkey, stuffing and green beans, but I wanted to keep it to a weekday’s level of effort.
