Topping for the fish tacos. This salsa may be used with any Mexican meal. Indian Chili power is a favorite of mine. It includes the whole chili (seeds and all) and has a lot more flavor than Cayenne pepper.

Karl’s Tabouleh
Long before you could easily find recipes on the Internet The Complete Middle East Cookbook by Tess Mallos is my go to book for Middle Eastern cuisine. Like many of my best cookbooks I bought this one at a library discard sale. It had seen much use before I bought it 25 years ago, but as tattered as it is, it has some great recipes in it. I have made a few changes to her recipe over the year’s but not as many as I make to other dishes.

Karl’s Saag Paneer

My son-in-law, Chris, just got back from two weeks in Shanghai, so he wanted anything but Chinese food for this Sunday’s dinner. I decided on Indian and I was trying for 5 dishes: Chicken Dopiaza (Chicken and Onion Curry), Chana Peshawari (Piquant Chickpeas), Split Red Gram (lental) Dal, Saag Paneer, and Pulao Rice. I have never made the first three dishes and they are definitely works in progress to be posted later. Last year I started making my own Palak Paneer. Once you have made fresh palak paneer you will find it hard to go back to any of the commercial imitations that are available.

Karl’s Greek Lamb Stew
I like to have lamb for my birthday, preferably Greek Barbequed Lamb. Tuesday is my “Big 6-0,” so I really wanted something with lamb. There is a Winter Spare the Air Alert for San Jose, so BBQ was not possible. I decided to do a lamb stew instead, Greek of course. I looked at many “Greek Lamb Stew” recipes on-line, and while many of them seemed good, I thought I could do better.

Karl’s Wild Rice Pilaf
This is one of those recipes where I took a cooking technique from another recipe that completely changes the dish. I have been making variations of this dish for most of my cooking life, but it rarely came out how I knew it should be. For me this has been a dish in constant evolution, I do not think I have ever made it the same way twice. This is the first time I have even written it down.

Karl’s Mesclun, Heirloom Tomato and Cucumber Salad
Our garden produced another spectacular cucumber and I did not want to make the same salad as the last time so I had this in mind when I went to the farmer’s market. One of the sellers had bags of mixed baby greens and vine ripe heirloom tomatoes. What I came up with is this salad.
