While I have been known to simply use a brand name chili, sometimes I like to go just a step further. This may take a few more minutes than simply opening a can, but the flavor is worth the effort.

Karl’s Barbecued Mulled Port Tri-tip

I decided to barbecue some tri-tip for Memorial Day. I have done this roast many different ways—California Fusion, Sichuan, Salt and Pepper with Green Pepper Sauce, Moroccan, Santa Maria style, Teriyaki, Cajun, and just plain Barbequed. What could I do that was new and different? I looked at some recipes marinating beef in red wine, but they seemed mundane.

Karl’s Savory No Salt Beef Stew

In truth, there is no such thing as truly no-salt cooking, many vegetables contain just a bit of salt all on their own. This stew is just as low salt as I can make it. Jan is visiting her sick brother this weekend. She decided to bring him some frozen home cooked meals as a mitzvah. He has recently been put on a super low salt diet. Many of the ways I would usually use to boost the flavor of a stew were right out—no soy sauce, anchovy paste, Worcestershire sauce, even commercial tomato paste—all have large amounts of salt.

Karl’s Quick Beef Chili with Beans

Everyone has their own ideas about chili. A wide variety of dishes fall under the general heading of “chili.” Some think this dish should be only beef slow cooked in chili sauce. Others use a wide variety of meats—chicken, pork, turkey—in their chili. Still others say that it should include beans as well. Vegetarians get rid of the meat all together and still call it “chili.”

Karl’s Corned Beef

I have never been overly fond of corned beef and cabbage, but like most part Irish-Americans I have usually made it on St. Patrick’s Day.  One reason for this dislike was that—like most Americans—I would go to Safeway and buy the plastic package of bright red meat. This sour meat would be tossed in the pot with potatoes, carrots and cabbage to be boiled to death.

Karl’s Chili California con Carne Suprimo

Jan has asked me to make a chili for a potluck with her new half-brother. The last time I made chili, I made a pot with beans and it was pretty hood, but I knew I could do better. Instead of ground beef I would use beef chuck and some rib meat. Last time, I also used canned broth as my braising liquid, this time I would braise pieces of marinated beef—to tenderness—and then use the braising liquid to re-hydrate and cook the beans.
