Karl’s Seafood Corn Chowder 2

Jan’s brother is still visiting and Jan wanted Crawdaddy Corn Chowder. On Sunday the Crawdaddy restaurant does not open until noon. This would push lunch to 2 PM, the time they should start thinking about makeing the drive back to Fresno. I talked her into a variation that does not require a restaurant purchased starter.

My brother-in-law is coming to visit and he is having trouble with his teeth. So I am planning a soft, low-chewing soup for dinner. This side of the family also likes their food pretty American standard, so heavy spices are out as well. However, I can work with that.

Karl’s Carrot, Coconut and Ginger Soup

Jan and Eilene went on a walking tour of the coast of Devon while they were in England. They stayed at Home Farm, a B&B run by the Stubbs. During the day Michael led them on guided tours of the historic area and at night would come back to food prepared by a master cook. Alison Stubbs is working on writing a cookbook, creating healthy, locally sourced, takes on traditional Devon fare.

Vichyssoise is a fancy name for a potato and leek soup that can be served either hot or cold. Not one to leave well enough alone, I started adding seafood to it a couple years ago. It soon became known as Fishyssoise in our household.

Karl’s Gazpacho

Traditional gazpacho always has bread in it, but modern variations frequently leave it out. Jan thinks of this dish as salsa soup. With Miriam’s soft food diet and Chris’ keto diet I can make all three of them happy by serving the bread as toasted croutons on the side.

Karl’s Refrigerator Chicken Soup II

I make chicken soup with whatever bits I have in the refrigerator, the backbones and wingtips of chickens, leftover bits of vegetables from other meals. This recipe is never the same twice, because what vegetables go into it depends entirely on what I have on hand. I do try to get a balance of colors, starch and flavors, but it is always different.

Karl’s Refrigerator Chicken Soup

Chicken soup is a comfort food for Jan and she has had a busy week. Monday was high stress university budget meeting, where she was standing in for the dean. Tuesday, she was the “relevant parent” for Eilene’s registration into college. Wednesday and Thursday she was working at a conference up in Sausalito that our older daughter, Myr, was running. I knew that she would want something for dinner tonight that would help calm her down.
