Karl’s Three Course Ham and Beans

I had defrosted one of my ham steaks for a meal that ended up not happening this Sunday. I do not want to re-freeze it, so I must think of a dish to make with it. Jan, who is just coming off a soft food diet, suggested ham and beans. Real food, but soft enough not to disturb her healing oral surgery.

Karl’s Hungarian Porkolt (pork stew)

When Jan came back from Disneyland, she asked me to make the crackers she had refused before she had left. Normally, with something like fresh crackers I would serve a “deli-dinner,” a selection of cheeses, cold cuts, and deli-salads. Jan decided that that was not what she wanted, because she had been eating “deli-food” for three days.

Karl’s Wise Sage Stew

Adapted from a recipe on The Hobbit

Eilene and her friends are still watching the Tolkien Ring Trilogy. For lunch I served them sausage, raw carrots, and lembas bread. Eilene is tied of beef, so I am making a pork stew for dinner. They have also requested more lembas bread (yes, it was that good).

Karl’s Beef Stew with Porcini and Ruby Port

Adapted from a Dirk Niepoort recipe

Jan is meeting her knitting group for their yearly holiday knitting and gift exchange party, so no fancy Sunday dinner this week. Eilene is off to have dinner with friends, so it is just Jan and I for dinner tonight. Jan has requested beef stew because it makes such good leftover for weekday lunches.

Karl’s Scotch Broth

Jan has her favorite soups, but Scotch broth is mine. Jan does not like it at all. This is something I make when she is off on a conference, like this week. Lamb, barley, and leeks, for anyone who is even a bit Scot it is paradise. (Hey, what can I say, I even like Haggis.)

Karl’s Turkey Italian Stew

Jan has been sick for the last few weeks, so I have been making a lot of chick soup. Since it is November and turkey necks are available and cheep, I decided to switch it up and make turkey stew. Three necks make for a hearty stock, but I am tired of noodles. Cannellini beans led me to think of this one as  Italian.

Karl’s Cioppino

Last week Jan asked for bouillabaisse for her birthday dinner. As I was looking up recipes, I realized that she was using this term in the sloppy American way we do as a generic word for fish stew. Bouillabaisse is a Provençal fish stew from Marseille that is made with specific fish, cooked in a specific order and served with a rouille, a mayonnaise sauce that Jan would not touch. What Jan was really asking for was cioppino.

Karl’s Chicken and Butter Dumplings

When I make chicken and dumplings I usually have to use Bisquick. I have tied to make dumplings from scratch, but Jan has never liked my attempts which usually come out as tasteless, dense sinkers. She only likes the fluffy ones produced from Bisquick, which I find way too salty.

Karl’s Japanese Chicken Curry

Eilene is having a bunch of her friends over for an overnight. She challenged me to make a Japanese curry. I do not particularly like Japanese curry, but it is for her and her friends.

Karl’s Ham and Five Beans

My younger daughter, Eilene, has just graduated from high school and she is having a few friends (10) over this week end. Teenagers must be fed, so I have decided to make ham and beans.  One of her friends is meat intolerant (i.e. not a vegetarian by choice), so I will have to come up with something special for him. That will take some more thought.
