Karl’s Chicken Pesto with Angel Hair Pasta

A week ago the basil in the garden was beginning to look sad. I harvested what I could and turned it into pesto to preserve it. Jan saw it in the refrigerator and asked for something made with the pesto tonight. I came up with this dish.

Karl’s Pesto

We have had a lot of trouble with bugs and pests in the garden this year. The basil was beginning to look sad. I salvaged what I could and made pesto to preserve what was left.

Karl’s Garlic Oregano Green Beans

I am always experimenting with quick ways to spruce up plain steamed green beans. This one was to go with my Chicken Pesto with Angel Hair Pasta.

Karl’s Orange-Infused American Scones with Currents

I am still trying to perfect my scone recipe. The last time I made scones I was half asleep and I added four cups of flour instead of four teaspoons of baking power. Fortunately I realized my mistake before I had added the butter. To recover I simply doubled the dry ingredients and then saved half in a plastic bag in the freezer for the next time I fancied scones.

Karl’s Carrot, Coconut and Ginger Soup

Jan and Eilene went on a walking tour of the coast of Devon while they were in England. They stayed at Home Farm, a B&B run by the Stubbs. During the day Michael led them on guided tours of the historic area and at night would come back to food prepared by a master cook. Alison Stubbs is working on writing a cookbook, creating healthy, locally sourced, takes on traditional Devon fare.

Karl’s 40 Clove Garlic Chicken with Mushrooms

It is a constant challenge to make my meals meet all of my family’s food preferences: low fat, keto, soft food, yes mushrooms/no mushrooms, not to mention various allergies. Most of the dishes that I am planning for this Sunday are a bit bland, so I thought that I should make at least one with some kick to it.

Karl’s Cucumber and Dill Salad

While the family has been away the garden has kept growing. I have two large Armenian cucumbers that need to be used soon. To go with my carrot soup I will make a light cucumber salad.  Some fresh dill and vinegar is something I have not done lately.

Karl’s Sesame Potatoes

I had originally planned to roast the potatoes with the chicken, but both Jan and Eilene went, “Alison made these great sesame potatoes.” [Hint, hint, nudge, nudge, say no more.] Again I am making this recipe based solely on a description of the finished product.

Karl’s Chicken Tacos

Jan and Eilene just got back from England, so of course they are hungry for anything but British food. Jan requested Mexican food. They had actually had very little chicken while they were traveling, so chicken tacos seem the way to go.

Karl’s Lamb, Oyster Mushroom, and Romaine Stir-fry

Jan and Eilene are still in England So I am still cooking for one. I got tired of tongue so I froze the last of it. If you ever make tongue make sure there are enough people to eat three pounds of meat in a meal or two.
