Karl’s Banana Almond Butter Mini Muffins
I bought some Trader Joes almond butter and it was—to say the least—disappointing, hardly any almond flavor at all. Jan really loves banana bread and when our bananas get to that state of over ripeness where no one will eat them it is time to mix up a batch. Mixing the almond butter with the banana bread seemed a good way to use it up.

Karl’s Banana Oat Mini Muffins with Fresh Raspberries
Several years ago, Cook’s Illustrated had a oat muffin recipe. While it was a tasty oat cupcake, it was not a “muffin”—too sweet! They did, however, have some good techniques for enhancing the oat flavor by toasting the raw oats and then grinding them into flour.

Karl’s Peach Banana Oat Mini-muffins
I have some bananas on the counter that are too ripe for just eating, time for banana muffins. I usually put dried apricots into my banana muffins, but today, I had a fresh peach sitting on the counter getting old. I peeled it, chopped it into small bits and added it to the mix.

Karl’s Cranberry Banana Bran Mini-Muffins
Adapted from a Fiber One recipe
Miriam and Chris have gone off carbohydrates so, of course, they gave us what they did not plan to eat anymore. One thing they gave use is something we would never think to buy for ourselves—Fiber One cereal. I do not generally eat a bowl full of bran rods for breakfast, so Jan looked up a recipe for muffins. Their recipe was too sweet, but I adapted it to our tastes.
