Karl’s Santa Maria Coleslaw

This week I am making Santa Maria tri-tip, which calls for Santa Maria-style beans. While many sites call for serving coleslaw with this meal, I could not find anything called “Santa Maria-style coleslaw.” Having grownup just a few miles away, in Santa Barbara, I decided to fill this obvious need.

Karl’s Grilled Chili Corn

One thing that son-in-law Chris requested for his birthday meal was corn on the cob. I am making beef and beans, so I though some chili powder would be the spice to use. Since I was making a big pot of Santa Maria beans, I did not want a whole ear per person, cutting them into quarter seemed the solution.

Karl’s Blueberry Scones

The last time I made blueberry scones Eilene did not like them. I had thought she simply did not like hot, cooked fruit. In talking to her, I found out that what she did not like was the soggy bread around the fruit. Using dried fruit was the solution.

I was making Asian cabbage rolls and I wanted to serve a vegetable side dish. When I looked at how much Chinese chive stem I had bought, it seemed a bit scant for five people. I had also bought an English cucumber, that I had planned to pickle, but I decided instead to use it to stretch the chive stem.

Karl’s Confetti Rice

I wanted a rice dish to go with my Asian cabbage rolls. Since I developed diabetes, Jan has pushed me to serve more brown rice. No Chinese meal is complete without some rice. You can eat until you are bursting, but if you have not eaten at least one bite of rice, then all you have had is a “snack.”
