Eilene has come down with another cold—I do not know what it has been about this year that we keep getting sick. Jan suggested that I make her chicken soup. A favorite of hers is chicken udon.

Jan and I have colds this week, so she asked for chicken soup for dinner. It is Meyer lemon season and I thought that a garlic lemon soup would be the thing to make. Jan was unsure about this, because she thought it would be too sour. My solution was to add a dollop of lemon curd to cut the citric acid.

The first dish I created on my own—rather than following a recipe—was a soup that Miriam called “Papa’s Fine Soup.” Some powdered lemon grass, chicken, snow peas, green onion, and udon noodles. While this soup has changed over time, it has been a comfort food in our house for almost 30 years.

Chicken and dumplings is an classic Southern (U.S.) that is basically a chicken stew topped with biscuit dough. At my house it is a weekday comfort food, whenever someone is stressed out. Although I make this dish once or twice a month, I realized that I took it for granted and have never posted about it.

The best known Sub-Saharan chicken stew, at least in America, is Ethiopian doro wot, This is a dish with a long ingredients list—complicated by many of them being hidden inside several spice blends. There are, however, many other Sub-Saharan countries, everyone of which has their own version of chicken stew.

Since I have been writing this blog, I have felt pushed to constantly upgrade my skills and recipes—new, different, better. I read Cook’s Illustrated and I get e-newsletters from NYTimes and Serious Eats—to the point that my inbox is full of posts that I do not have the time to read. I mine these posts—not so much for recipes—but as a source of new ideas and techniques.

This is a meal that started with a bottle of pickles. Jan went to the Maker Faire and came back with a jar of McVicker Pickles curried cauliflower. Chicken curry seemed like a good dish to go with them.

A common weekday dinner at my house is Chinese chicken salad. I have done it often enough that it has become a bit boring. I thought about what I could do that was similar, but in a different culture. When I make tacos, Jan uses the leftovers to make a taco salad for her lunch. I thought: “That is a starting point!”

Every year, my sister Karen renews my subscription to Cooks Illustrated at Christmas time. Over the years, I have tried and usually adapted many of their recipes—I am frequently at odds with some of their philosophies of cooking. In the October 2006 issue, they presented a recipe Stir-Fried Chicken with Bok Choy and Crispy Noodle Cake.
