I made some biscuits for a weekday dinner and I wanted something to go with them. Today, I felt like salmon. Trying to think of something new to do with it, I used some honey and Balsamic Vinegar de Modeno.

Karl’s Fish Taco Salad
Jan was gifted with two small heirloom tomatoes and a large ripe avocado. She requested a dinner with salsa and guacamole. I have gotten a bit tired of fish wrapped in a taco shell, so I thought I would turn it into a salad.

Karl’s Japanese Salmon Rice
Another of my leftovers lunch recipes for one. I had about an ounce of teriyaki salmon left over from the night before, as well as some cold Japanese rice. This is a common Japanese leftovers dish, but I did not look any of them up. I just threw together what seemed reasonable to me. To go with my rice, I decided to make some teriyaki chicken wings and I threw in some Japanese pickled cucumber as my salad.

Karl’s Seafood Chowder
Eilene’s friends are coming over to watch Game of Thrones. I have some fish that I have to use tonight, so I thought I would do a seafood chowder. Some of her friends can be picky eaters, so I am leaving out the onion I would usually add to tonight’s soup

Karl’s Roasted Salmon with Leeks II
Last Tuesday was St. Patrick’s Day and no one in this household likes what is sold as “corned beef” in the supermarkets. In fact, except for Chris, my son-in-law whose family is from Boston, we do not favor “boiled dinners” (everything thrown into the same pot and boiled). For us the classic dish for Irish Day is the Salmon of Knowledge.

Karl’s It’s Not a Tuna Casserole! III
Jan got a temporary crown on Monday, so she is still eating soft foods. She asked for It’s Not a Tuna Casserole! for Thursday night’s dinner. This was not my first attempt to reinvent the American tuna casserole into something actually like food.

Karl’s Ttoro, Basque Fish Stew
Chris threw down a Basque seafood stew challenge for the new year. In researching the possibilities I found two stews: Marmitako and Ttoro. Marmitako is a tuna and potato dish and Chris is back on his low-carb diet after the holidays. I think Ttoro is more of what he had in mind.

Karl’s Yosenabe II
Jan’s friends are coming to town for the Quilt Festival, for me this means several special dinners and this year Jan has ordered a special breakfast. For the first meal on Friday I decided to do a fish stew. Most of the European stews were out, because Barbara doesn’t like tomatoes. Japanese Yosenabe seemed the obvious choice.
Karl’s Baked Salmon with Lemon and Thyme
I was shopping at Lucky supermarket and I noticed that they had whole salmon for $3 a pound. It may have been a weekday, but I could not pass that up. Personally I prefer to barbecue salmon, but it is a weekday and with all of the fires in California it has been constant “spare the air” days.
