I have a problem with casseroles. In the forty years that Jan and I have been together, I have made maybe three tuna casseroles. Last month, bowing to pressure from both Jan and Eilene, I made a seafood casserole. They both really liked this dish. They both had seconds and barely left enough for two more servings as their lunches.

It’s Not a Tuna Casserole! It’s not! It’s not! It’s not!
Jan received some green beans and cherry tomatoes from the SJSU Environmental Studies garden [correction]. There were not enough green beans or tomatoes to make a separate dish. I started to think of ways I could add them to a main dish. I finally decided to use them in a seafood noodle casserole.

Karl’s Creole Gumbo
The kids are not coming over this Sunday and Jan wants to go to a movie. Instead of my usual feast I will be making a late Sunday lunch. I finally settled on gumbo, a Louisiana signature dish.

Karl’s Portuguese Salt Cod and Potato Casserole
Adapted from a chef Manuel Azevedo recipe
Traditionally this dish is serves as a casserole. Chef Azevedo, born on the island of São Jorge in the Azores, turns this Portuguese dish upside down. This allows the exposed codfish to brown slightly and the layer of potatoes on the bottom to crisp.

Jan and Eilene have been on me to make meals are less heavy on the meat and starch. They want more vegetables. A simple green salad though is so boring.

Karl’s Broiled Salmon Teriyaki
I had a craving for teriyaki salmon, but since it is a weekday I did not want to fire up the barbeque. Broiling in the oven is the obvious solution. This idea was met with cheers from my family. Steamed rice and pickled vegetables are the obvious go-together for a weekday Japanese meal.

Karl’s Veracruz-style Fish Tacos II
I am having a crowd over tonight. Stitches is in town so the aunties, Pat and Barbara, are in from Fresno overnight. Miriam and Chris decided to come tonight, so they could see them too. Having more people to dinner means more food restrictions. Pat does not eat pork or beef and Barbara will not touch tomatoes. Miriam needs soft foods and Chris does not eat starches.
