Karl’s French Chicken Salad Croisandwich

I am not sure that this even counts as a recipe.

I have leftover Karl’s French Chicken Salad from last night. I usually try to have leftovers from my meals, so that someone (or several) can have a nice lunch the next day. Jan wanted crackers with her serving of chicken salad. I decided to put mine on a croissant.

Karl’s French Chicken Salad Wraps

I have leftover roast chicken, from last night. By itself, the chicken is moist and flavorful. The question is, “What to do I do with it?”

Karl’s Black and Wild Rice Salad

When Jan was visiting her friends, one of them made a salad out of the January issue of Bon appétit. She bought the magazine and asked for this salad for dinner. While the salad looked good, I wanted to make some changes. I do not like cooked squash, especially cold cooked squash.

Karl’s Carolina Coleslaw

I am making orange glazed salmon and mashed yams tonight. While Jan is on her soft food diet this dish will be too hard for her to eat, however, Eilene wants something besides baby food for dinner.

Karl’s Green Bean Salad

I am making Greek lamb for Christmas Eve dinner with my sister, Karen. A lettuce salad does not seem like the right side dish. I thought I would do a cold green bean salad.

Karl’s Mesclun Salad with Red Raspberry Balsamic Dressing

I have a hot vegetable for this meal, but Chris will not eat the yams, because of his ketogenic diet. Leafy greens and turnips are within his diet, so I am making a quick salad. I will serve the dressing on the side and he can take as much or little of it as he wishes (it will have a bit of sugar, which is also not on his diet).

Karl’s Colorful Coleslaw

I have been doing a lot of Christmas cooking lately, so I have had very little time to blog about cooking. Earlier this week we had sausages and latkes for dinner. Coleslaw goes well with this meal, but I did not have enough of any one cabbage to make it.

Karl’s Caprese Salad II

Jan likes caprese salad, which is tomatoes, mozzarella, onion, olives and basil in a light vinaigrette. Usually I go to La Villa, a very good Italian deli in Willow Glen and pay through the nose for a very small portion. While La Villa makes a good salad, I decided that I could make it cheaper and fresher.

Karl’s Roasted Green Bean Salad

I usually serve a simple green salad when I make cioppino. Today I decided to do something special for Jan’s birthday. I picked up some nice green beans at yesterday’s farmers market. She also likes roasted vegetables and Big Paws Mission Fig balsamic vinegar. I thought I would combine all of these things into a cold salad to go with the fish stew.

Karl’s Orange and Pear Spinach Salad with Lime Vinaigrette

I decided that I needed some greens to go with my salmon and soup that I am serving to my sister. A spinach salad seemed like a good idea, but plain leaves and dressing did not seem like enough. I have been doing a lot of cooking lately and I have several “left over ingredients” on hand.
