Karl’s Turkish Artichoke, Tomato and Cucumber Salad

Adapted from a Whole Spice recipe

When Jan went to Sonoma a few months ago, she bought me some Istanbul Turkish Salad Seasoning from Whole Spice. I was planning to make a typical tomato and cucumber salad with it, but in searching the Whole Spice site I found their posted recipe. Of course, I could not make it the way they did, but it gave me ideas.

Karl’s Zatar Spinach Israeli Couscous

Jan suggested Israeli couscous as the starch dish to go with my Easter lamb. Ptitim, or “Ben-Gurion rice,” has only a nodding acquaintance with the fine grained couscous of the rest of the Middle East. It was created in the early years of the nation of Israel as a rice substitute.

Karl’s Sautéed Fresh Garbanzos

I am making my Middle Eastern Easter Feast. In addition to mixed olives and pickles, I saw some fresh garbanzos in my local Middle Eastern market. Pan roasting them with a bit of spice seemed like a quick and easy side dish for a feast.

Karl’s Strawberry Vinaigrette Cauliflower and Green Beans

I used half a head of cauliflower in the soup I was making this Sunday. I decided that I would make a side dish with the rest, but it was not quite enough to feed five people. I also had some green beans, left over from earlier in the week, but also not enough for a separate dish. Finally, the strawberries I bought on Saturday needed to be used up, because they were quickly starting to go bad. Of such happen stance, a new dish is created.

Karl’s Moroccan Couscous Salad

Adapted from A Dash of Flavour

I am making Moroccan stuffed vegetables and I wanted a dish for the starch eaters in my home. I found this recipe on-line and my first thought was to make it Californian, raw vegetables and starch with a dressing. As I read through the directions I began to understand the appeal of the lightly sautéed vegetables. Still, I could not help myself from making some changes.

Miriam’s Balsamic Strawberries

Myr and Jan went to a pot-luck at Pie Ranch yesterday (Hey, for them this is work). Myr’s contribution the meal was Balsamic Strawberries. These are good all by themselves, but they can also go equally well on a mesclun salad or vanilla ice cream.

Karl’s Cuban Mojo Sauce

I found Seville sour oranges and Cuban mojo sauce sounded like a good thing to mix with beef for a savory taco. While I am making this sauce for carne asada tacos, it could also be used on chicken, fish or pork. For vegetarians, it could even be use as a sauce for rice or vegetables . The Seville sour orange juice gives this sauce a unique and distinctive flavor.

Karl’s Japanese Pickled Cabbage and Carrots (Hakusai no sokusekizuke)

I decided to have salmon teriyaki for dinner and the meat and rice needs a vegetable. For Japanese cuisine this usually means some kind of tsukemono (漬物; pickled vegetables). The quickest and easiest method is salt preserving (塩漬け; shinozuke).

Karl’s Hawaiian Sweet Potato Soup

I had decided to make an African peanut and sweet potato soup to go with my Asian coleslaw and ham steak. When I told her how I had planned to spice the ham to meld these divergent dishes, her response was a very definite, “No!” She suggested that I make the soup, Hawaiian and make Hawaiian pork to go with it. A quick adjustment of the spicing and the addition of coconut milk met with her satisfaction.

Karl’s Colorful Asian Coleslaw

Normally, with ham, I would want to serve North Carolina coleslaw, but Jan is not overly fond of this. She finds the harsh Western vinegar too sour. She prefers the more gently sweet and sour flavors of Asian coleslaw made with rice wine vinegar.
