Karl’s Moroccan Couscous II

I had decided to make Moroccan chicken tajine for this Sunday’s dinner. Couscous is an obvious side dish—especially since some of my diners are on a low carb diet. The chicken would be well spiced so I thought that the side dish should be a bland-ish canvas for the flavorful sauce.

Karl’s Orange Infused Sugar, Updated

One of my early recipe posts was for orange infused sugar. I was making candied orange peel and I was left with about two cups of orange infused sugar. I found that this orange sugar was very good for giving recipes a sweet citrus flavor. A jar of this sugar now sits on my counter—next to the salt and pepper—ready to add as needed.

Karl’s Asian Pear Compote

I woke up wanting waffles this morning. Plain waffles are a bit bland, they need something to top them. I had a large Asian pear in my fruit bowl and thought, “Why not.” A compote is simply fruit cooked in a sugar syrup—apple sauce is just one type of fruit compote.

Karl’s French Onion Soup III

The kids are still on their keto/Atkins low-carb diet. These diets are vegetable/protein forward. I am making brisket and a cucumber salad. I had also decided on making a French onion soup, but the question was how could I make it low car. My solution was to give my diners the option of whether their soups would be topped with bread and/or cheese.

My wife, Jan, went to Fresno to visit family and friends just before Christmas. One of her friends orange bombed me with 40 perfectly ripe, 3 inch navel oranges—enough to make almost 20 jars of marmalade. I have already made and given away this year’s Christmas batch. What could I do to use them up without them just sitting on my shelf?

Karl’s Drunken Pinto Beans II

Adapted from an America’s Test Kitchen recipe

I am making tri-tip tacos for Christmas and tacos call for beans. I made these a few months ago and they were very popular with my family. The term “drunken” implies that you are using a large amount of an alcoholic beverage in the dish. The trick to keeping it from tasting “boozy” is to cook off the alcohol before adding any water.
