With the French girl here every day seems like a challenge meal day. I decided I needed a vegetable side dish to go with my chicken and faro. I have not made Brussels sprouts in a while and Jan really loves them.

Karl’s Savory Beef Muffins
I have a bunch of teenage girl’s over today to watch Japanese anime with Eilene and the French girl who is staying with us. Jan had suggested using the mini-muffin pan to make homemade pizza rolls. The mini pan seemed too fussy, so I thought I would do something like pocket pizzas in a standard sized muffin pan. When the girls arrived, they had other ideas. They had apparently been eating pizza for the last 24 hours at another house, so they wanted anything but pizza. I suggested hamburger pockets and this seemed like a popular idea.

Karl’s Sautéed Leek Greens with Mushrooms
I decided to use the tops of the leeks I was using for my Fishyssoise in a separate dish that Chris, my son-in-law, would eat. He also really likes mushrooms and bacon as well. Making a dish out of these three things fits his keto diet and I wouldn’t mind eating it as well.

Karl’s Celeriac Non-potato Salad
Chris is still on his keto diet and Myr is still on the soft-food diet. Chris is avoiding starches and Myr has been told not to eat salad greens that she would have to chew. As a result, many things that I would normally make of the Fourth of July are off limits.

Normally I use Kraft’s Fat Free Mayonnaise for most things, because of Jan’s diet restrictions. Jan suggested that with the general theme of my blog, “That Fresher is Better,” I should try my hand at real mayonnaise.

Karl’s Caribbean Black Bean Dip
This Sunday we will be going over to the kids’ apartment, so I need to make my dishes transportable. Miriam is still on the soft food diet, so she has asked for bean dip. My White Bean Dip is a mild, Italian dip. I am thinking the black bean dip should be spicy and Caribbean.

We rent out house from our friends, Peg and Russ. They live in Texas. This morning, they texted that they were in San Jose and could we get together? We invited them over for a last minute Fourth of July BBQ.

Karl’s Refrigerator Chicken Soup II
I make chicken soup with whatever bits I have in the refrigerator, the backbones and wingtips of chickens, leftover bits of vegetables from other meals. This recipe is never the same twice, because what vegetables go into it depends entirely on what I have on hand. I do try to get a balance of colors, starch and flavors, but it is always different.

Karl’s Apricot Quick Jam
My neighbors know that I make jam. As a result, they occasionally show up on my door step with boxes of fruit. They buy more then they eat and then give it to me before it goes bad. Yesterday it was apricots.
