Karl’s Savory Beef Muffins

I have a bunch of teenage girl’s over today to watch Japanese anime with Eilene and the French girl who is staying with us. Jan had suggested using the mini-muffin pan to make homemade pizza rolls. The mini pan seemed too fussy, so I thought I would do something like pocket pizzas in a standard sized muffin pan. When the girls arrived, they had other ideas. They had apparently been eating pizza for the last 24 hours at another house, so they wanted anything but pizza. I suggested hamburger pockets and this seemed like a popular idea.

Karl’s Sautéed Leek Greens with Mushrooms

I decided to use the tops of the leeks I was using for my Fishyssoise in a separate dish that Chris, my son-in-law, would eat. He also really likes mushrooms and bacon as well.  Making a dish out of these three things fits his keto diet and I wouldn’t mind eating it as well.

Karl’s Garlic Barbequed Corn

Nothing beats barbequed corn, except garlic barbecued corn. You can just throw shucked corn right on the grill and have the really good taste experience that American Indians have been having for literally centuries. However, I was raised in California where the motto (should be): “We reserve the right to fusion every cuisine.” I like my corn directly grilled, where the corn kernels are exposed to the heat and get a bit of charring.

Karl’s Refrigerator Chicken Soup II

I make chicken soup with whatever bits I have in the refrigerator, the backbones and wingtips of chickens, leftover bits of vegetables from other meals. This recipe is never the same twice, because what vegetables go into it depends entirely on what I have on hand. I do try to get a balance of colors, starch and flavors, but it is always different.

Karl’s Apricot Quick Jam

My neighbors know that I make jam. As a result, they occasionally show up on my door step with boxes of fruit. They buy more then they eat and then give it to me before it goes bad. Yesterday it was apricots.
