Karl’s Molé Basted Barbecued Chicken

A bag of molé has been living in my freezer for months. I wanted to do some barbecued chicken for this Sunday’s dinner, but I did not want it to be the same old, same old. I thought using the molé as a barbecue sauce was just the ticket.

Karl’s Simple Mexican Rice

Technique drawn from Mel’s Kitchen Café

I have made a more complex version of this dish, but today I wanted a simple side dish that would not distract from the star dish, the chicken. Also, half of my diners this week are not eating starch, so it would be wasted effort. I have been trying to make Mexican rice for years with only limited success.

Karl’s Chili Rellenos in a Casserole

Jan has requested chili rellenos to go with my molé chicken this Sunday. A quick look at recipes on-line told me that it is a fussy recipe that has several steps fraught with peril. You have to broil, deseed, and then stuff the chilies without breaking them. Then you have to coat them in a egg batter and deep fry them, still without breaking the chilies or having the coating fall off.

Karl’s Chili California con Carne

Jan has a hankering for chili. She pointed out that I have not made it in a long time—looking at my posts, not since February of last year. For Jan, chili means “chili with beans.”

Karl’s Chili California Powder

The term chile (chili) is a complex. It can refer to: 1) a large number of fresh capsicum pods of varying heat levels; 2) the dried and/or smoked pods; 3) the same pods in powdered form (with or without the seeds); and 4) varied spices blends that include one or more of the powdered chilies as a main ingredient.

Karl’s Cola de Buey en Chile Rojo (Oxtails in Red Chile Sauce)

I am making chili beans for Jan, but son-in-law Chris, is on a super low starch diet. I decided that I would make a beef chile for him (OK, it is for me too, I admit it). Normally I would use beef chuck for making carne con chili rojo. However, Chris really likes oxtail and I think this would go really well. For some reason, my recipe for Moroccan Oxtail is one of the most popular pages on my blog, so I do not think he is alone in this preference.

Karl’s Purslane with Chilies and Mexican Green Onions

Purslane started showing up at the farmer’s market recently. As you may know by now, I am always up for trying something I have never tried before. This week I am going to the Cal-Mex border and making chili beans and oxtails rojo. As a side dish, I decided to sauté purslane with Anaheim chilies and Mexican green onions (cebollines).

Karl’s Barbecued Veracruz-style Fish Tacos

This dish has become a standard weekday meal at my house. Jan asks for it at least once or twice a month. This makes it a bit boring for me, so I am always tinkering with the recipe trying to make it even better.

Karl’s Tri-tip Fajitas

Last Sunday I made Santa Maria barbecued tri-tip. By Tuesday I had only a scant half a pound of meat left. By itself it was not enough to use as a main dish, so I decided to stretch it with grilled peppers. Fajitas are seared peppers and can be made with any meat, something like a Mexican stir-fry.

Karl’s Santa Maria Barbecued Tri-tip

On the Fourth of July we went to a friend’s house for Santa Maria barbeque. Jan liked it so much that she asked me to make it this Sunday. A Santa Maria Barbecue is not complete without pinquito beans and Santa Maria style salsa.
