Karl’s Three Cabbage Coleslaw

This is for a weekday meal—simple broiled salmon and a half baked roll, so I usually do not go to all the effort that I put into my Sunday feasts. However, that does not mean that it should not taste good. “Quick” does not necessarily mean “bad.”

Jan’s Cinnamon Chocolate Mousse

Jan is making chocolate mousse to go with my 65th birthday dinner. For me Claudia’s Chocolate Mousse is the mousse by which all others are judged. It is however, not a health food. It has replaced cakes as the birthday treat in our house.

Karl’s Beef Brisket with Spanish Flavors

The kids are still on their keto/Atkins low-carb diet. These diets are vegetable/protein forward. I decided that I wanted to make a brisket. In looking at my blog I found that while I had made corn beef brisket, I have never done a simple brisket recipe.

Hamachi Shots

Two weeks ago, I tried making hamachi shotsChef Jeffrey Stout’s signature recipe at The Sea by Alexander—for the first time. I was rushed and forgot to add all of the ingredients. I also took a short cut that did not work well. This time, I am trying to faithfully follow the recipe—not something that is really in my nature.

Karl’s Keto Crab Cakes

The kids are feeling a bit toady after weeks of holiday eating and have decided to go on a keto/Atkins low-carb diet. These diets are vegetable/protein forward. Usually, I go with dishes where I can serve the starch on the side, for those who wish for more.

Karl’s Super-Concentrated Fine-Shred Orange and Cranberry Marmalade

My wife, Jan, went to Fresno to visit family and friends just before Christmas. One of her friends orange bombed me with 40 perfectly ripe, 3 inch navel oranges—enough to make almost 20 jars of marmalade. I have already made and given away this year’s Christmas batch. What could I do to use them up without them just sitting on my shelf?

Karl’s Depression Era Goulash

Jan’s family Christmas Eve traditional meal was Grandpa Von Hausen’s goulash. This was a Depression era dish of bacon, hamburger, onions, a whole bottle of ketchup, garlic, paprika, and cans of peas, kidney beans, and pork & beans. The idea was that this dish would sustain the family throughout the days of Christmas—without anyone needing to stop and cook.

Karl’s Deconstructed Stuffed Chicken

This Thanksgiving, I did a deconstructed stuffed turkey. Jan invited one of her former Chinese students to dinner and she had requested American “festival foods.” Since I still have half a turkey in my freezer, I did not want to do another, but I thought I could adapt my recipe to chicken.

Karl’s Orange Infused Pancakes

Adapted from a Martha Stewart recipe

Note: I have been so busy with the holidays and posting big festival meals that some little gems have gone begging.

As much as I like to cook, breakfasts have not been a high priority for me. My secret sin is that my morning pancakes have always come from a box. Two months ago, my family woke up wanting pancakes and my cupboard was bare. Time to learn how to make them from scratch—“To the bat-internet!”
