Jan is hosting the Dean’s Lunch and I am making crackers and schmears (1, 2, & 3). For the non-Vegans, I am making my cream crackers, but one of the deans is a Vegan. I decided to try my had at a Vegan water cracker.

Karl’s Pork Sausage Empanadas
This was a rather spontaneous meal. I was wondering what to do with several things that were cluttering up my refrigerator: one quarter pound homemade pork sausage, one quarter pound of ground pork, a Russet potato—that I had peeled for another meal and ended up not using—half a red bell pepper (ditto), one small yellow onion. I could just chop it all up, throw it in a skillet, fry it up, and call it “hash,” but that would not be me. I am not the first person to face this dilemma, World Cuisine is full of solutions. Hash in a pocket bread is called an empanada.

Karl’s Ale Almond Bread
I am making bread to go with my ham and navy beans. I wanted something lighter and different than my usual Guinness beer bread. I decided to use a Belgium Fat Tire Amber Ale.

Karl’s Rustic Italian Bread II
This is not so much a new recipe as an experiment in bread making. I made my first foray into crusty breads a few weeks ago. In my experience in bread making, cooking the dough in a dry oven produced a soft crust. I had made a large batch of dough and I thought I would bake half of it in a dry oven and half in a moist oven. Small details make big differences.

Karl’s Rustic Italian Bread
I am making a chicken cacciatore for Sunday dinner and I wanted fresh bread to go with it. While I have made white bread and other baked goods many times, I have never ventured into crusty bread territory. Bread is simply a mixture of flour, water and some kind of leaven, but the results can vary widely depending of the differences in handling—both before and during baking—and with the addition of a variety of ingredients.

Karl’s Ttoro, Basque Fish Stew
Chris threw down a Basque seafood stew challenge for the new year. In researching the possibilities I found two stews: Marmitako and Ttoro. Marmitako is a tuna and potato dish and Chris is back on his low-carb diet after the holidays. I think Ttoro is more of what he had in mind.

Karl’s Indian Naan
I planned to have a variation of lamb Rogan Josh for this Sunday’s dinner with the kids. A saucy meat dish calls for bread to sop it up. In an Indian feast this means naan.

Karl’s Two Tapenade & Mini-Fry Bread
I have been into breads lately, trying my had at hallah and (American) Indian fry bread. Jan has friends over for a holiday meal this weekend and as an hors d’oeuvre I thought I would do tapenade and mini-fry breads.
