Karl’s Onigiri (Rice Balls)

Onigiri are the Japanese equivalent of a PB&J sandwich, something to take for a school lunch or on a picnic. One of Eilene’s Japanese class friends taught her how to make these a couple of years ago. While they are commonly formed into triangles and may have savory or salty filling, they may also be formed into simple round balls.

Karl’s Simple Mexican Rice

I have made a more complex version of this dish, but today I wanted a simple side dish that would not distract from the star dish, the chicken. Also, half of my diners this week are not eating starch, so it would be wasted effort. I have been trying to make Mexican rice for years with only limited success.

Karl’s Wild Rice Salad

Jan wants to go to a movie for Mother’s Day, Avengers: Age of Ultron. For me this means making dishes that I can prep ahead. To go with my steamed mussels, I decided that a rice salad would be nice. In days past I would probably have used white Jasmine rice, but with my diabetes I am going with whole grains.

Karl’s Japanese Salmon Rice

Another of my leftovers lunch recipes for one. I had about an ounce of teriyaki salmon left over from the night before, as well as some cold Japanese rice. This is a common Japanese leftovers dish, but I did not look any of them up. I just threw together what seemed reasonable to me. To go with my rice, I decided to make some teriyaki chicken wings and I threw in some Japanese pickled cucumber as my salad.

I am making Cuban Picadillo, a mild Cuban chili. Chili calls for beans and rice. I have made Mexican black beans and rice before, but each country—village?—mother?—has their own take on this dish. This is my take on Cuban Moors and Christians.

Karl’s San Francisco Pulao

One of the recent Cook’s Illustrated had a recipe for the perfect rice and pasta pilaf (read Rice-A-Roni™). While this dish is famously San Francisco Italian, its origin is actually Armenia. While the dish made from the box is always passably edible, trying to make it from scratch is usually a disaster—either the rice is underdone or the pasta turns into mush.

At four o’clock today, Eilene told me that her friends were coming over for dinner. She suggested florescent mac and cheese, trying to make it easy on me. I just could not do it. This meal was really almost as easy, and so much better for them.
