Karl’s Leftovers: Salmon Salad with Raspberry Radish Slaw

This Sunday we had a complex soup, cioppino,  that would take up most of my attention. I did not want to have just a plain greens salad, but it needed to be simple. Fortunately, yesterday was Jan and my 33rd anniversary and I had made salmon wraps for dinner.

Karl’s Sesame Asparagus Stir Fry

It is asparagus season, so every time I go to the store there are bundles of this vegetable that Jan and Eilene love. Miriam and I cannot eat asparagus, so I usually leave them where they lay. For this Macanese inspired Sunday dinner, I decided that I would make some for them, but I will also make a separate vegetable dish for Myr and myself.

Karl’s Chinese Broccoli with Mushroom Sauce II

Asparagus are in season, but Miriam and I have difficulty with it. I decided to make two vegetable dishes for this Sunday’s dinner. I found some young Chinese broccoli (kai-lan) for us and I made it with a sight Macanese twist.

Karl’s Goan Cauliflower and Spinach

I am making a Goan Dinner this Sunday. I am not overly fond of cauliflower, but I have some diners who are on-again/off-again non-starch-eaters. I needed a dish to fill them up, if this was an off day. I decided a Goan cauliflower dish was what I needed. In the rest of India ghee—clarified butter—is the cooking fat of choice. In Goa they prefer to use coconut oil.

Karl’s Cream of Broccoli Soup

My son-in-law is on a low starch diet, so it is a challenge to come up with recipes that fit his desires. I decided that a cream of broccoli soup would be the thing. Looking on-line for ideas showed me that most of the recipes included some form of starch—flour, potatoes, corn starch, beans, and even nuts. For this recipe I did my usual, one ingredient from this recipe, another ingredient from that recipe to make something new and different.

Having just made my Christmas jams—orange and lemon—I decided to use them in making dinner. I used the lemon marmalade for the chicken. For the broccolini, I chose the orange marmalade. This is really a quick and easy side dish.

Karl’s Chinese Broccoli with Mushroom Sauce

On Christmas morning my family likes to go out for dim sum (点心; snacks), Chinese small plates. Frequently we go to Tai-pan in Palo Alto. In addition to the many and varied flavors, Tia-pan’s presentation is always impeccable—no chopped vegetables sloshed on a plate. Of the many excellent dishes we had, one was the one we always order is Chinese Broccoli with Oyster Sauce.

Karl’s Harcourt Vert with Red Bell Pepper

I needed a vegetable to go with the chicken Madeira that I was serving for Jan’s visiting friends. I decided on French green beans, Harcourt vert, that are thinner and more tender than regular American green beans. Plain green beans are a bit boring, so I decided to add more interest with herbs and red bell pepper.

Karl’s Leek and Bell Pepper with Dark Soy

I needed a vegetable to go with my barbecued Sichuan Turkey. One of the soy sauces I have been experimenting with is Chinese dark soy sauce. It is thicker and has a more complex and less salty flavor than Kikoman’s. A few weeks ago I made a dish with green beans that my family really liked.
