Karl’s Sukiyaki

Jan asked for sukiyaki for Sunday dinner. This is one of the dishes my mother, Claudia, would make as I was growing up. However, not one of the children thought to take down her recipe.

Note: To hold off my diners while I was making last minute preparations I put out some tsukemono for them to snack on, cucumber pickles and salt pickled cabbage.

Karl’s Japanese Orange Cucumber Pickles

I made sukiyaki this Sunday for the family dinner. The final simmer takes place on the table and I decided that I should have some pickles on the table for my diners to snack on while they waited for the dish to finish cooking. I made some salt cabbage (kyabetsu shio-zuke; キャベツ塩-漬け ) and some cucumber pickles.

Karl’s Mughal Saag Paneer

Originally adapted from Sinful Curry

I wanted a vegetable dish for my birthday dinner to go with my Mughal lamb and rice dishes. My family really likes saag paneer, which has become my go-to dish for Indian meals. The only ingredient in modern Indian cuisine that would have been uncommon 500 years ago is tomatoes.

Karl’s Jalisco Pico de Gallo

Jan recently discovered that her birth father’s people live/lived in the mountainous region of along the Jalisco / Nayarit border. She asked for a Mexican Christmas with tamales this year. I decided that I needed a salad to go with them. A site I found describing Jalisco cuisine mentioned a pico de gallo of “pieces of jicama, orange, pineapple with lime juice and ground chili.”

Karl’s Asian Pear-apple , Radish and Arugula Salad

I was looking for a vegetable side dish to go with my meatloaf. A few weeks ago, I discovered that letting the root vegetables marinate in a marmalade base worked really well as a salad dressing.  This is what I settled on for tonight’s salad.

As I read through them I got a hankering for cold noodles, but none of their dishes really suited me. I borrowed a few ideas from their cellophane noodle salad, but mine is based more on my Vietnamese summer rolls.

Karl’s African Spinach Soup

I wanted to make a Sub-Saharan side dish to go with my West African chicken stew. I knew I wanted to use garbanzo beans and spinach, but all the dishes I found on-line threw in peanut butter to “make it African.” Since my chicken dish already contained peanut butter, I did not want to use it—two dishes that taste too similar is not interesting. I had to find another way to make my dish “African.”

Karl’s Garlic Lemon Barbecued Corn

I am barbecuing chicken wings for this Sunday’s Dinner and I needed a vegetable side dish. While Jan like corn on the cob, much of what you find in the stores has already gone moldy—pull back the top leaves and take a sniff. My wife will not touch it when it is that state. Fortunately, there is an Summer vegetable stand near us that has really fresh corn.
