Karl’s Argentinean Chimichurri

Chimichurri is the South American sauce that is the go-together with grilled meat. Fresh herbs are minced with onions and garlic to make a piquant green sauce. Unlike similar sauces further north in South America, the Argentinean version does not usually use chilies. Looking at some recipes to get an idea of the range of ingredients, I came up with my own version.

Karl’s  Cal-South American Empanadas

I am barbecuing Argentinean beef and I wanted some kind of starchy side dish. Although it is from the other end of the South American continent, I suggested Venezuelan arapas—basically a thick corn pancake—but for some reason Jan said “No.” She was more amenable to empanadas—stuffed pocket bread.

Karl’s  Argentinean Ensalada Mixta (Mixed Greens Salad)

I am barbecuing Argentinean beef and I wanted a salad to go with it. While some Argentinean salads are more Mediterranean  influenced—filled with eggs, potatoes, or fruit—the salad commonly served with asado—barbecue—is almost Japanese in its simplicity. A few high quality ingredients, simply dressed. The flavors of the ingredients should stand proudly on their own.

Karl’s Greek Artichoke Rice

I make Greek barbecued lamb for Easter and I wanted a Greek starch side dish. I have done Spanakorizo (spinach rice) and Spanakorzo (spinach pasta), but I wanted to do something different. The Persian store near me carries large frozen artichoke caps and I decided to do something with them.

Karl’s Four Chile Chili Powder

I had made a chile chicken and was kind of locked into recipes South of the Border for my leftover dishes. To season my chicken tacos and chili chicken soup, I made a batch of chili powder. This was enough seasoning for both dishes.

I bought a Safeway ham the other day and I was thinking about a weekday dinner. I wanted something other than my usual sweet potatoes and steamed green beans to go with the ham. I decided what I needed was a dish that covered both my starch and vegetable. Three bean salad seemed the way to go.

This week I am making Santa Maria tri-tip, which calls for Santa Maria-style beans. While many sites call for serving coleslaw with this meal, I could not find anything called “Santa Maria-style coleslaw.” Having grownup just a few miles away, in Santa Barbara, I decided to fill this obvious need.

Karl’s Grilled Chili Corn

One thing that son-in-law Chris requested for his birthday meal was corn on the cob. I am making beef and beans, so I though some chili powder would be the spice to use. Since I was making a big pot of Santa Maria beans, I did not want a whole ear per person, cutting them into quarter seemed the solution.

I was making Asian cabbage rolls and I wanted to serve a vegetable side dish. When I looked at how much Chinese chive stem I had bought, it seemed a bit scant for five people. I had also bought an English cucumber, that I had planned to pickle, but I decided instead to use it to stretch the chive stem.

Karl’s Oyster Mushrooms in Oyster Sauce

Eilene does not like mushrooms. I usually make a separate dish with the mushrooms for everybody else. There are many possible ways to sauce this dish, but today I decided on oyster sauce as the base sauce and then just threw in what pleased me.
