Hushpuppies are a Southern fried cornbread. Many recipes call for self-rising flour (both corn and wheat). These are not always available, but they are easy to make.

I am having a crowd over tonight. Stitches is in town so the aunties, Pat and Barbara, are in from Fresno overnight. Miriam and Chris decided to come tonight, so they could see them too. Having more people to dinner means more food restrictions. Pat does not eat pork or beef and Barbara will not touch tomatoes. Miriam needs soft foods and Chris does not eat starches.

Karl’s Veracruz-style Fish Taco Spice Blend II
I thought I would change up the seasoning for my fish tacos. I found some guajillo ground chili. I added that to the mix as well as some coriander seeds. I also decided to eliminate the non-Mexican Indian chili powder.
Note: If you are a Vegan this would go well on grilled tofu or tempe.

Karl’s Quick Guacamole
I am having fish tacos and I wanted some guacamole to go with it. This is so simple it is barely a recipe. I know that some people really “doctor up” guacamole, but I think that a good ripe avocado just needs a bit of lime juice to prevent it from turning brown.

Karl’s Szechuan Salt and Pepper Roast Chicken Au Jus
It has been a while since I have done roast chicken. One thing this blog has done for me (to me?) is to force me to test the bounds of flavors. I have been making Sichuan pepper shrimp and it has been very popular with my family. I decided to try this seasoning with a whole chicken.

Karl’s Chinese Chili Roasted Brussels Sprouts
I did not want all of my dishes to be the same, so I decided to leave the Sichuan pepper out of this one. When I am home alone, I will frequently make a lunch of some sautéed vegetables with a tablespoon of Chinese chili garlic sauce stirred in. I decide to carry that idea a step further in these roasted vegetables.

Karl’s Scallion Rice
The rest of my meal is so fancy, plain rice seemed bland. A few weeks ago I made confetti rice with Chinese chives. That technique should work just as well with scallions (green onions).

Karl’s Shire Hens in Apple Wine
Eilene is having her friends over again and she has requested lembas bread and Lord of the Rings stew. I did not want to make the same one that I made last time, but none of the ones on-line struck my fancy.
