Karl’s Ttoro, Basque Fish Stew

Chris threw down a Basque seafood stew challenge for the new year. In researching the possibilities I found two stews: Marmitako and Ttoro. Marmitako is a tuna and potato dish and Chris is back on his low-carb diet after the holidays. I think Ttoro is more of what he had in mind.

Karl’s Chicken Sausage Dinner Strada (Strata)

When  I left home I copied all of my favorite recipes from my mother’s recipe box. Strada is one of those easy to make and infinitely flexible dishes that can be adapted to breakfast, brunch, lunch, potluck, or dinner.  One of Jan’s friends invited us to a “bring a dish” New Year’s party, so I decided to make a strada.

Jan’s Persimmon Pumpkin Pie

Jan loves persimmons and she loves pie. As usual, she tied to make it healthier and her own. While this dessert may not have been in keeping with the theme of my Indian feast, who cares? It was a great pie!

Karl’s Broiled Lamb Rogan Josh

Adapted from a The Kitchen recipe

Everyone in my family loves lamb in any form—it is a Lueck thing. Jan unfortunately—or fortunately depending on your point of view—is a Lueck by marriage and she only likes barbecued lamb. Stewed, simmered, braised lamb is right off her menu.  A classic lamb rogan josh is lamb braised for hours in a spicy sauce. My challenge was to adapt this recipe to her tastes.

Many Indian dishes tend to be very spicy. Hot food calls for a cooling side dish, a raita, which always contains yogurt. In the West, we are most familiar with cucumber raita, but in India the word covers a wide variety of dishes.

Karl’s Crab and Lobster Bisque

Jan asked for crab bisque for Christmas Eve dinner—she saw a recipe in this week’s food section. Chris is down south, so Miriam is coming over and we will be celebrating just a bit early—the last Hobbit movie and a nice dinner. To make it special, Jan also asked me to add some lobster to the bisque. Miriam’s request for this holiday meal is for potato latke and as a green we have agreed upon a carrot and spinach salad.

Karl’s Roasted Pears with Caramel Sauce

We were planning to have Uncle Tom’s apricot pie for Christmas Eve dinner, but I forgot to defrost it. At the last minute I threw together this desert. I had a few pears and some leftover store-bought pear-caramel sauce from a previous dinner. Pears, butter, a bit of spice and whiskey and voilà.

Karl’s Lightly Pickled Carrots Salad with Spinach

I needed a salad for Christmas Eve dinner. Jan really loves carrot salad, but I wanted at least some green veg in the meal, so I added some baby spinach. I have made this salad before as a spinach salad, garnished with carrots. Here I reverse the proportions, a carrot salad garnished with some spinach.
