Jan is off on her yearly stitching retreat with her friends for four days. While she will tolerate barbecued lamb, she will not eat it any other way. Her absence allows me to make dishes that Jan will not eat.

Karl’s Moroccan Chicken Tajine
The recipe on my blog that has gotten the most views is my Moroccan oxtail tajine. While this dish was very tasty, it was way too fatty for Jan. Jan had her gall bladder removed while we were in China and she is in the 10% of the population that has difficulty digesting fats after that operation.

Nothing will bring an ex-pat back home faster than a desire for the cooking of home. Miriam and Chris have been doing a lot of traveling recently, so I have not done a Sunday dinner in several weeks. This is my variation on a Yankee pot roast.
