The farmer’s market last weekend had these huge Brussels sprouts. The small ones were an inch and a half and the largest were easily two inches. Normally I like to buy the smallest I can find, but these were like cabbages. I decided that I would cut them in half and cover them in onion and garlic so that the juices would flow down between the leaves as they roasted.

Karl’s Caprese Salad
Jan likes caprese salad, which is tomatoes, mozzarella, onion, olives and basil in a light vinaigrette. Usually I go to La Villa, a very good Italian deli in Willow Glen and pay through the nose for a very small portion. While La Villa makes a good salad I could make it cheaper and fresher. Today I noticed that we had a lot of tomatoes in our garden that were just ripe, and I thought, “Gee, why don’t I make my own?”

Karl’s Caribbean Ham Steak
Today, as I was thinking about making a ham steak, I was wondering what I could do that was new and different from my usual brown sugar, vinegar and clove glaze. I made a Caribbean salad last Sunday and I was thinking that a variation of that dressing might work well. Jan thought the using a whole Habanero was a bit too spicy, but go with your own tolerance.

Karl’s Cornbread & Claudia’s Johnny Cake
I am making ham steak tonight and my choices were baked yams or cornbread to go with it as the starch. I chose cornbread. While Jan will not touch cornmeal “mush” she loves cornbread.

Karl’s Baked Pear Crumble
I saw some pears in the market today. Although I usually do not make desserts, I thought about my mother, Claudia, and her baked apple crumbles. She would slice apples and spread a oatmeal mixture on top and then bake it to sweet, gooey/crunchy delight. I decided to adapt her recipe to pears.

Karl’s Cinnamon Scone Pinwheels
I have recently been making excellent scones, but why leave it at excellent? My mother, Claudia, used to make raised dough cinnamon pinwheels. These were heavy, sweet and sticky, and took hours to make. Could I make a lighter, slightly less sweet cinnamon pinwheel that I could make in much less time?
Karl’s Jamaican Chicken Salad
I made Jamaican Jerk Chicken on Sunday and I have half a breast leftover. Checking out the Jamaican cook book, that Jan brought me back from England, I saw that it had a recipe for Caribbean coleslaw. If I put the chicken together with the coleslaw I could come up with the Jamaican equivalent of a Chinese Chicken salad. Of course, I view a cookbook recipe as a source of ideas and insparation, not a list of ingredients, so my salad is only a nod at the original recipe.

Karl’s Broiled Plantains
I am making Jamaican Chicken salad tonight. For a Chinese chicken salad I would have crunch noodles as the starch. That doesn’t sound very Caribbean, so I decided on broiled plantains instead.
