Karl’s Cherry Bruschetta

Adapted from a Pacific Coast Farmers’ Market Association recipe

Jan and I were at our local farmers’ market and Jan spotted a table with piles of free printed recipes. This one appealed to her, so I made it for her. It substitutes cherries for tomatoes, the common base ingredient of brushetta. I took it one step further and used my favorite, Rainier cherries.

Karl’s Party Tandoori Chicken Meatballs

Miriam and Chris moved recently and they had a house-warming this weekend. A few weeks ago, I made Tandoori meatballs and I decided to make some “party-sized meatballs” for their gathering. This was made slightly more complicated by their request that these be carbohydrate-free.

Karl’s California Fusion Pork Adobo

Base on Ultra Rich Caramelized Filipino Pork Adobo

I was originally going to call this a Filipino adobo, but I served it to Eilene’s friend from the Philippines.  While it was “…good, it is not Filipino pork adobo.” It was too sweet and who puts vegetables in a meat dish like adobo?

Karl’s Surf and Turf

Miriam requested Surf and Turf for her birthday dinner this week end. I suggested several possible international spicings, but she wanted it to be a simple salt and pepper tri-tip. If you are going to eat beef, sometimes you just want to taste the beef.

Karl’s Pan-roasted Shishitō Peppers with Lemon

Shishitō peppers are the hot new pepper in California—which is surprising since most of them are very mild. Miriam and Chris requested them for her birthday dinner this Saturday. Jan and I wanted to know what all the fuss was about, so I cooked some up this week.

Karl’s Persian Refrigerator Pickles

Surf-and-turf is a high protein meal that begs for a variety of interesting vegetables. I decided to make some quick pickles for Miriam’s birthday party this Saturday. I thought some sweet and sour pickles will offset the grilled vegetable dishes I am making.

OOPS: I just caught the typo. Ummm, tastes like pork.

Karl’s Barbecued Sichuan Chicken

I decided to make barbecued chicken with a Sichuan glaze this Sunday. This is something a Chinese cook from “the Mainland” would never do. This, however, is a California Fusion recipe, taking something from one cuisine and mashing it together with the techniques of another. I am also serving dàn dàn miàn and pickled cabbage.

Karl’s Sichuan Pickled Cabbage with Red Peppers

I needed a vegetable dish to go with my Dàn dàn noodles and Sichuan chicken. The Chinese are not much into uncooked vegetable side dishes, unless they are pickled in some way. This is the closest that Chinese cuisine comes to a “salad.”

Karl’s Orange and Baby Greens Salad with Cuban Vinaigrette

I am making Cuban Picadillo for dinner on Sunday, but I had difficulty finding any Cuban green vegetable side dishes. I needed to make more of my orange sugar, which always leaves me with two or three navel oranges to use up after I have removed all of the zest. I decided that an orange wedge and baby lettuce salad would do the trick. To make the vinaigrette “Cuban” I used lime juice and a bit of culantro Recaíto sauce.

Karl’s Chicken Alfredo Casserole

Eilene’s friends are coming over for their usual Thursday night TV marathon—The Avengers this week. I have made mac & cheese for them several times and I am getting a bit board with it. I decided to do a different cheesy noodle dish using an Alfredo sauce.
