Karl’s Fish Taco Salad

Jan was gifted with two small heirloom tomatoes and a large ripe avocado. She requested a dinner with salsa and guacamole. I have gotten a bit tired of fish wrapped in a taco shell, so I thought I would turn it into a salad.

Karl’s Italian Salad Bar

Every Tuesday the Deans get together for a working lunch. Each week a different dean is responsible for providing the food. This is the last time my wife will be providing the food—she is going back to being an Anthropology professor—so Jan asked me to make the lunch.

Karl’s Greek Spanakorzo Salad (Spinach and Pasta Salad)

I am making some Greek lemon chicken for a weekday meal. I made Spanakorizo (Greek spinach and rice) as a hot side dish last Easter. Today, I want to use the same flavors to make something lighter. This is more a fresh spinach salad with pasta, not orzo with a bit of spinach.

Karl’s Open-faced Chicken Salad Sandwiches on Pita Bread

I made chicken stock yesterday, which always leaves me with the problem of what to do with the chicken bits I pick off the neck and back bones. I know that the professional chefs consider this meat “used up” after they have made a stock. They simply discard it as being tough, flavorless, and too much trouble to pick off the bones. As a home cook, I cannot help but think this is wasteful.

Karl’s Wild Rice Salad

Jan wants to go to a movie for Mother’s Day, Avengers: Age of Ultron. For me this means making dishes that I can prep ahead. To go with my steamed mussels, I decided that a rice salad would be nice. In days past I would probably have used white Jasmine rice, but with my diabetes I am going with whole grains.

Karl’s Orange and Baby Greens Salad with Cuban Vinaigrette

I am making Cuban Picadillo for dinner on Sunday, but I had difficulty finding any Cuban green vegetable side dishes. I needed to make more of my orange sugar, which always leaves me with two or three navel oranges to use up after I have removed all of the zest. I decided that an orange wedge and baby lettuce salad would do the trick. To make the vinaigrette “Cuban” I used lime juice and a bit of culantro Recaíto sauce.

Karl’s Greek Salad Bar

I am making lamb for Easter and I wanted a salad to go with my lamb and pasta dishes. A Greek salad seemed to be the way to go. This is a rustic salad of tomatoes, cucumbers, red onion, olives, feta cheese dressed with salt and herbed olive oil. In America this is usually serves over a bed of lettuce. I decided to use a mixed herb salad.

Karl’s Mesclun Salad with Lightly Pickled Vegetables

I wanted a salad to go with my bean soupMesclun greens are a combination of baby greens. While these, by themselves, make a perfect acceptable salad it is always better to add a few crunchy veggies for interest. Today, I am using green beans, red radish, and red onion.

Karl’s Moroccan Orange and Spinach Salad with Ras el Hanout Shrimp

It is my birthday and I thought I would get creative and please myself. I was looking on-line for Moroccan dishes to add to my feast. I was scanning more for idea, rather than recipes. This combination for the salad just sort of clicked into place as I was reading.
