I am making the Dean’s Lunch and one of the dinners is a Vegan. Jan and I finally settled on a salad with crackers and a selection of schmears. To meet the needs of the one, the many must eat Vegan—to paraphrase. On the other hand, just because something has no animal products in it does not mean it can’t be delicious.

Karl’s Roasted Garlic Couscous
After living in Chengdu, Sichuan, China, my family has always really loved garlic—a lot! I had an idea that popped into my head about a side dish to go with my Moroccan lamb—large chunks of roasted garlic floating in a sea of fluffy couscous. My thought was that as you took a bite of couscous you would get a burst of roasted garlic goodness.

Karl’s Grönsakskaka, Swedish Potato and Vegetable Medallions

I went to Ikea last week and, after buying Eilene a bunch of furniture for the updating of her room, I stopped off to buy Swedish meatballs, fish egg paste, and pickled herring. I saw a thing called Grönsakskaka and—always interested in new things—I bought a box to go with the meatballs.

Karl’s Simple Mexican Rice

I have made a more complex version of this dish, but today I wanted a simple side dish that would not distract from the star dish, the chicken. Also, half of my diners this week are not eating starch, so it would be wasted effort. I have been trying to make Mexican rice for years with only limited success.

Karl’s Lemon Saffron Couscous
I am making Surf-and-Turf for Miriam’s birthday dinner this weekend. I am making a Tunisian salad and I thought lemon couscous would be a good compliment. I have made lemon couscous before, but I thought I could improve it.

Karl’s Wild Rice Salad
Jan wants to go to a movie for Mother’s Day, Avengers: Age of Ultron. For me this means making dishes that I can prep ahead. To go with my steamed mussels, I decided that a rice salad would be nice. In days past I would probably have used white Jasmine rice, but with my diabetes I am going with whole grains.

Karl’s Japanese Salmon Rice
Another of my leftovers lunch recipes for one. I had about an ounce of teriyaki salmon left over from the night before, as well as some cold Japanese rice. This is a common Japanese leftovers dish, but I did not look any of them up. I just threw together what seemed reasonable to me. To go with my rice, I decided to make some teriyaki chicken wings and I threw in some Japanese pickled cucumber as my salad.

Karl’s Dàn Dàn Miàn (Sichuan Peddler’s Noodles)
Dàn dàn miàn (担担面; “peddler’s noodles”) are boiled noodles with a spicy sesame/peanut sauce poured over them. The story goes that lunch peddler’s would carry a dàn dàn—a shoulder pole with a bucket on either end—with the cooked noodles in one bucket and the spicy sauce in the other. When you bought your lunch you were expected to provide your own bowl and the seller would put in some noodles and splash some of the sauce over them.

Karl’s Dan-Dan Chicken Wings with Noodles
I pack lunches for Jan and Eilene, so I am often end up making lunch just for myself. Usually this will be some variation of last night’s leftovers. Today’s leftover ingredient is one serving of cold pan fried noodles. Plain noodles beg to be topped with something.

Karl’s Cuban Moros y Cristianos (Cuban Black Beans and Rice)
I am making Cuban Picadillo, a mild Cuban chili. Chili calls for beans and rice. I have made Mexican black beans and rice before, but each country—village?—mother?—has their own take on this dish. This is my take on Cuban Moors and Christians.
