Japan has many Tsukemono, literally “pickled things.” When my father came back from Japan in the fifties, he introduced my family to Japanese cuisine. One dish that he learned to make was salt pickled cabbage (kyabetsu shio-zuke; キャベツ塩-漬け ).

I had the urge to make Japanese pickles this week. There are many types of Japanese pickles—Tsukemono—and I am on a quest to learn them all. This week it was misozuke, miso flavored pickles.

Karl’s Moroccan Orange and Spinach Salad with Ras el Hanout Shrimp
It is my birthday and I thought I would get creative and please myself. I was looking on-line for Moroccan dishes to add to my feast. I was scanning more for idea, rather than recipes. This combination for the salad just sort of clicked into place as I was reading.

Karl’s Sichuan Roasted Chicken with Honey Lemon Glaze and Stir-fried Vegetables
Jan and Eilene just got back from Hopi. Traveling in Arizona, other than chilies, most places they ate did not use any spices, beyond salt and culinary ash—the additive that turns blue corn meal dishes blue. Now that they are home, they want spicy dishes for dinner.

Karl’s Kashmiri Cucumber Raita
Many Indian dishes tend to be very spicy. Hot food calls for a cooling side dish, a raita, which always contains yogurt. In the West, we are most familiar with cucumber raita, but in India the word covers a wide variety of dishes.

Karl’s Lightly Pickled Carrots Salad with Spinach
I needed a salad for Christmas Eve dinner. Jan really loves carrot salad, but I wanted at least some green veg in the meal, so I added some baby spinach. I have made this salad before as a spinach salad, garnished with carrots. Here I reverse the proportions, a carrot salad garnished with some spinach.

Karl’s Lightly Pickled Carrots and Spinach Salad
Eilene requested carrot salad and some kind of green thing as the vegetable to go with the chili dogs for her birthday meal. I had bought a bottle of Champaign vinegar for another meal a few weeks ago and that seemed like a likely place to start. Thinking about what herbs and spices would compliment this rather expensive ingredient, I started grabbing bottles out of my spice rack. This is what I came up with. Giving the carrots a bit of time to pickle a bit also seemed like an obvious idea.

Karl’s Honey Lemon & Herb Chicken and Roasties
Jan wanted “roasties” for dinner. I had thought that Eilene was going to eat out with her friends. Two hours before dinner, she announced that she was bringing two friends over for dinner. Roasties for two had suddenly become dinner for five. Time to get creative.
