Jan had a temporary crown put in on Monday and she wanted a soft creamy soup for dinner. In times past this would mean some variation of vichyssoise, potato and leek soup. I am always looking for something new, so I started thinking about an African sweet potato and peanut soup/stew.

Karl’s Roasted Pears with Caramel Sauce
We were planning to have Uncle Tom’s apricot pie for Christmas Eve dinner, but I forgot to defrost it. At the last minute I threw together this desert. I had a few pears and some leftover store-bought pear-caramel sauce from a previous dinner. Pears, butter, a bit of spice and whiskey and voilà.

Karl’s Lightly Pickled Carrots Salad with Spinach
I needed a salad for Christmas Eve dinner. Jan really loves carrot salad, but I wanted at least some green veg in the meal, so I added some baby spinach. I have made this salad before as a spinach salad, garnished with carrots. Here I reverse the proportions, a carrot salad garnished with some spinach.

Karl’s Italian Vegetable Soup
Jan is hosting this year’s Ladies Christmas Get-together. Some of her friends are vegetarian. I am making a chicken dish for the meat eaters and a pasta dish for the pasta lovers. We decided that a soup would be a good dish for the vegetarians.

Karl’s Sweet Potato and Apple Casserole
Our Sunday paper has a supplement, the USA Weekend, which usually includes one of those recipes for people who do not really cook—you know the add “can A” to “can B” kind. This week they actually had a recipe for Thanksgiving that Jan thought looked pretty good. Not being one to follow any recipe, I had to make some changes.

Jan’s Cherry Cranberry Sauce
Jan usually makes a cranberry Cumberland sauce for Thanksgiving. This year she thought she would mix it up. She had bought some frozen tart cherry juice for smoothies and she thought it would go well with the tart cranberries.

Karl’s Herbed Flatbread

Recently, Eilene asked me to make flat bread. My first attempt, with rosemary, came out thick and chewy. It was OK, but not spectacular. I decided to try again only this time rolling the dough thinly and adding chives and lemon time. This was more of what I had in mind.

Karl’s Mexican Rice with Beef
At four o’clock today, Eilene told me that her friends were coming over for dinner. She suggested florescent mac and cheese, trying to make it easy on me. I just could not do it. This meal was really almost as easy, and so much better for them.

Karl’s Japanese Cucumbers Pickles with Lemon and Ginger
Jan’s childhood friends are coming to town for the Quilt Festival this week end. I am planning to make a Japanese dinner on Friday night, so I decided to make pickles. I went to the Japanese store for supplies and thought why not have Japanese tonight.

Karl’s Lemon Japanese Cucumber Pickles
Note: Today, I am posting a new pickle recipe. I was planning to refer the discussion I had made in this post, but when I got there the cupboard was bare, I found that I had forgotten to post the recipe. While this recipe produced a satisfactory pickle, the lemon flavor simply did not come through.
