Karl’s Spiced Biscotti

Karl’s Almond Biscotti

Every year we make several Christmas give-aways—food treats to bring joy to our friends. It really started to get serious about 15 years ago when we moved a house with orange, lemon and grapefruit trees. I could not stand that the trees produced far more fruit than we could deal with, so I started making marmalade in bulk and giving it away at Christmas.

Eilene is at Disneyland and Myr is not feeling well, so it is just Jan and me tonight. Jan wanted something that we could reheat when Eilene gets home late tonight, but also be good for lunches during the week. She decided that she wants ham and beans.

Karl’s Pollo al Mattone (Chicken Under Brick)

I based this recipe on a Mario Batali recipe that Richard May posted. The original recipe called for a massive amount of fennel pollen, not an ingredient that you can pick up at any supermarket. I went with the alternative, toasted fennel seeds, and—perhaps being less fond of fennel—I used a lot less. I also thought that Mario’s recipe used way too much salt.

I am making  an Italian “chicken under brick” this Sunday. I needed an Italian vegetable dish to go with it. I based the chicken on a Mario Batali recipe, that Richard May had posted, and this led me to Batali’s recipe for Ciambotta.

Karl’s Roasted Italian Potatoes

I am making “chicken under brick” and a ciambotta. The ciambotta usually contains potatoes, but I have one diner who is on a diet that excludes potatoes. When Eilene heard that there was going to be no potatoes in the meal she said, “No Potatoes!!” To try and please everyone, I decided to make a separate potato dish.

Karl’s Minestrone with Mini Italian Meatballs

My potato plant died this week, so I harvested the potatoes. This was actually a sport from the year before, but if it really wanted to grow who am I not to water it? I ended up with five small potatoes. These were not enough to make a dish by themselves, so I would have to add them to something.

Jan, Miriam and Eilene are all going out for a girl’s massage evening. This is part of Miriam’s birthday week. After work, Jan has 20 minutes to eat dinner before she has to take Eilene to meet Miriam at the spa. Jan asked for soup and Eilene asked for minestrone.

Karl’s Turkey Italian Stew

Jan has been sick for the last few weeks, so I have been making a lot of chick soup. Since it is November and turkey necks are available and cheep, I decided to switch it up and make turkey stew. Three necks make for a hearty stock, but I am tired of noodles. Cannellini beans led me to think of this one as  Italian.

Karl’s Caprese Salad II

Jan likes caprese salad, which is tomatoes, mozzarella, onion, olives and basil in a light vinaigrette. Usually I go to La Villa, a very good Italian deli in Willow Glen and pay through the nose for a very small portion. While La Villa makes a good salad, I decided that I could make it cheaper and fresher.
