Jan likes flax bread, but because of her oral surgery she did not eat the loaf that I bought her last week at the Farmer’s Market. The loaf is now stale. It is either throw it away and waste the bread or do what cooks have been doing with stale bread for centuries, bread pudding.

Jan’s Bread Pudding Pancakes
When Jan made her bread pudding, her plan was to divide the recipe into two. One small pudding for our breakfast and another for dinner over at Miriam’s tonight. Because she slept in this morning, she did not think she would wait for the pudding to bake before she had to go to the gym. I suggested pancakes.

This is a family recipe from Jan’s father. I do not know where the name comes from (Charlie Browns?), but it is an excellent breakfast. It is, however, one that you generally have to plan ahead for.

Karl’s Almond Banana Oat Mini-muffins
Jan took some bananas with her when she went to hang out with her friends this weekend. In the end they did not eat them, but the travel left them in pretty sorry shape. Banana bread for breakfast!

Jan’s Blueberry Kale Smoothie
Jan is still on a blended food diet, so she has been making a lot of smoothies. The blueberries help a lot in disguising the dark green of the kale, so today’s smoothie looked quite presentable and tasty. Jan thought it was delicious.

Karl’s Boxing Day Pear Compote
This is my sister’s last day here and I am making pancakes for breakfast. I noticed a few pears on the counter that were past their eating prime. Fortunately, they were still good on the inside. I decided to make compote to go on this morning’s pancakes.

Karl’s Scottish Oatcakes
I had leftover lamb fat from making Scotch broth. I decided that oak cakes would be a good compliment to this stew. I use only a pinch of salt, because I am on a low salt diet. You may use as much as a quarter teaspoon. How much fat you may use is also a personal choice, you may use as little as one tablespoon. It is also not really necessary to brush them with fat, as I did, a Pam-ed baking sheet will work as well.

Karl’s American Vanilla Scones with Currents
The primary difference between American and British scones is the sugar. British scones do not use it. While I like my scones with a hint of sweetness, I just do not like them cloyingly sweet. I add some sugar, but not a lot.

Karl’s Banana Bread with Crystallized Ginger
We had some overripe bananas in the bowl, so it is banana bread or throw them out. If you have been reading my blog, you know how I feel about wasting food. I decided that today I would make the high fat version of my banana bread, but I still have to add something I have never tried before.
