Karl’s Fried Green Onion and Ham Deviled Eggs

My mother, Claudia’s recipe for deviled eggs was fairly standard for the Fifties. My wife, Jan, is very unadventurous when it comes to deviled eggs—a little mayo, raw green onion, a bit of pepper & salt, and she won’t kick if I top it with a sprinkle of paprika. When I am making deviled eggs just for myself—if she is away on a trip or something—I like to push the boundaries.

Karl’s Biscuits and Gravy

This posting is more of a “what do I do with the leftovers.” When I make a whole roast chicken we will usually eat only about half of it. If I have a left over breast, I will slice it for a Chinese chicken salad. If I have made the pan drippings into gravy, I have the joy of biscuits and gravy for breakfast, today with leftover fruit salad.

Karl’s Cinnamon Sugar Monkey Bread

Every month, Jan and usually, my daughter, Miriam attend the monthly Ethno Breakfast. While many of the larger companies have discovered the usefulness of using Anthropologist to research what their customers need and want, they usually only hire one or two. This leaves these Ethnographers isolated from others who really “get” what they are talking about. The Ethno Breakfast gives them a chance to socialize and discuss problems and solutions—topics that do not really interest the company officers and computer engineers, with whom  they spend much of their days.

Karl’s Buttermilk Biscuits

I had bought some buttermilk to make cornbread—which takes only one cup of milk—but all the store had for sale was quarts. What could I do with all of the extra buttermilk? Obviously, biscuits for breakfast.

Karl’s Blackberry Biscuit Hand Pies

I had some blackberries on the counter that were getting a bit worse for time. I thought I would turn them into a quick jam. Then I decided to put the jam into biscuit dough to make hand pies.

Karl’s Peach Banana Oat Mini-muffins

I have some bananas on the counter that are too ripe for just eating, time for banana muffins. I usually put dried apricots into my banana muffins, but today, I had a fresh peach sitting on the counter getting old. I peeled it, chopped it into small bits and added it to the mix.

Karl’s Quiche Lorraine

Eilene’s friends are coming over again and Jan suggested that I make a quiche. Several years ago Jan taught in Paris and brought me back a French cookbook. I have attempted several recipes from it, but I have never been able to follow their directions.

Karl’s Biscuits and Beef Jerky Gravy

More than forty years ago, I visited my second cousins in “Pleasant Valley,” Arizona. While I was there I had one of the most memorable meals of my life, biscuits and beef jerky gravy served with a side of fresh pinto beans. While biscuits and gravy is a standard Southern/Western dish, I have never had—before or since—as good as I had that day.

Karl’s Tarragon Potato Latkes with Fresh Pear Sauce

Eilene has been asking for latkes lately. She has a friend coming over for dinner, so this seems like a good day to make them. Always trying new things, I decided to use tarragon and replace the usual apple sauce and sour cream with pear sauce and crème fraiche.

Karl’s Drambuie Pear Sauce

I wanted something a bit different to go with my latkes Monday night. Jan made a Drambuie sauce to go with the mousse she made for Father’s Day. I thought it made for a very tasty sauce and that it would complement the flavor of pears very nicely. Most of the alcohol in this sauce will cook off, leaving only the sweet flavor.
