I cannot claim this recipe as my own. Miriam brought me some Aceto Balsamico Tradizionale di Reggio Emilia when she came back from Italy. I was under strict instructions never to use this vinegar in a salad dressing. The Acetaria San Giacomo’s website had photos to show off their products and one was of raspberries with vinegar and a light dusting of powdered sugar. This was clearly an acceptable use of “the good stuff.”

Jan’s Red, White, and Blueberries
Jan made the dessert for our Fourth of July weekend dinner. It of course had to be patriotically themed, but the recipes in the newspaper were all full of sugar. The kids are on the Atkins diet so sugar. The berries themselves are suspect, but she did not have to add extra sugar the whipped cream.

Jan’s Low Sugar Chocolate Mousse with Drambuie Butterscotch Sauce
For me Claudia’s Chocolate Mousse is the mousse by which all others are judged. It is however, not a health food. It has replaced cakes in our house as the holiday treat. Jan has spent years perfecting the techniques of making mousse, but it took her years before she dared to tinker with mom’s recipe.

Karl’s Blueberry Bran Muffins

Miriam and Chris have gone off carbohydrates and gave us some Fiber One cereal. Earlier this week, Jan looked up a recipe for muffins and I adapted it to our tastes. While I am not a fan of bran, they were actually pretty good. Today, I had some blueberries starting to go bad on the counter and I thought blueberry muffins!

Karl’s Cranberry Banana Bran Mini-Muffins

Miriam and Chris have gone off carbohydrates so, of course, they gave us what they did not plan to eat anymore. One thing they gave use is something we would never think to buy for ourselves—Fiber One cereal. I do not generally eat a bowl full of bran rods for breakfast, so Jan looked up a recipe for muffins. Their recipe was too sweet, but I adapted it to our tastes.

Karl’s Roasted Red Pears
We had Cuban Picadillo for dinner and I had some lime juice left over. I had three red pears and I thought that the juice, with some rum, would make a nice Cuban twist on roasted pears. Red pears are a variety of d’Anjou pears.

Karl’s Micro Lemon Marmalade
Every Christmas for more than the last decade I have made marmalade as a giveaway. a few years ago I started making special batches of intense jams that contained only the zest and juice of the oranges. Last weekend I was lemon bombed and I wondered if I could make a marmalade of just lemons.
