Karl’s Lemon Chicken Habanero with Sautéed Spinach and Fingerling Potatoes

Many times, the inspiration for one of my Sunday dinners is a food challenge by the family. Other times, I look for an untried world cuisine to make my own variation of a traditional dish. This week, I started with a bottle of hot sauce.

Karl’s Paraguayan Bori-Bori de Pollo Soup (Chicken and Dumpling Soup)

I had decided to make a chicken soup for a weekday dinner. I have gotten bored with my usual chicken noodle soup, so I wanted to do something different. Looking at my overall list of Country Views, I noticed that no one has ever visited my blog from Paraguay. I though what kind of soup would they make?

Karl’s Paprikás Csirke (Hungarian Chicken Paprikash)

Jan’s friends are coming for Stitches—a gathering of knitters— and I thought I would make chicken paprikash for one of their meals. Traditional Hungarian chicken paprikash (Paprikás Csirke) is chicken slowly simmered with pork lard, onions, green peppers and seasoned with paprika and sour cream.

Karl’s Biscuits and Gravy

This posting is more of a “what do I do with the leftovers.” When I make a whole roast chicken we will usually eat only about half of it. If I have a left over breast, I will slice it for a Chinese chicken salad. If I have made the pan drippings into gravy, I have the joy of biscuits and gravy for breakfast, today with leftover fruit salad.

Karl’s Buttermilk Roast Chicken II

In Southern cooking (U.S.), a buttermilk marinade is frequently used to tenderize the chicken pieces before frying. I decided to try the technique in roasting a whole chicken. I found a few recipes that called for cutting up the chicken, but none for leaving it whole. While I have made buttermilk roast chicken before, every recipe has room for improvement.

Karl’s Roasted Chicken with Sage and Pears

One of the benefits of passing out jams as Christmas gifts is that you get other peoples’ efforts in return. This year, I received some Bartlett pear jam from Michael and Jennifer. While it is good on my breakfast toast, I thought it would make a good base for a chicken marinade. To complete my dinner I had a large vegetable side dish and buttermilk biscuits for the starch eaters.

Miriam’s Chicken Salad

Miriam has been moving this week and her mother and sister have been helping her. In this situation it is polite to feed your workers, but with the kitchen half packed up it can be a challenge. Takeout pizza is the usual solution, but my daughter is capable of being creative. A little chicken, vegetables, fruit, a bit of mayonnaise and viola you have a salad.

Karl’s Lemon Marmalade Roast Chicken

Jan invited her new half-brother to dinner so I was planning a nice meal. In the end he came down sick and didn’t come. I’m afraid he missed a really nice meal.

Karl’s  Orange Butter Roast Chicken

Miriam and Chris are on a trip this weekend, so it is only Jan, Eilene and myself for Sunday dinner. I did not want to go to a great deal of effort, but I did not want to make a “blaa” weekday dinner either. A whole roasted chicken was just what was called for to go with my sweet potatoes and broccolini.

Karl’s Chicken Apple Sausage Bierock

Saturday was Halloween and the possibility of an uninterrupted, sit-down dinner were slight.  I decided to make pocket breads to have a “grab and go” meal, between trips to answer the front door. A new variation of a bierock was the obvious answer.
