Karl’s Aioli

I am making aioli for my crab cakes. This sauce is more or less mayonnaise with garlic. You may make it mellow by roasting the garlic first or make it really strong by putting in a lot of raw garlic. For my crab cakes I want a little bite, but I do not want the garlic to overpower the crab. I am adding just one small clove of garlic.

Karl’s Char Siu (Chinese Barbecued Pork)

Char siu is a common ingredient in many Chinese dishes. There is nothing quite like a fresh char siu baozi for a quick comfort meal. However, in Mainland China most home cooks do not make their own, because most apartments lack the oven necessary to cook it properly—at least in the cities 25 years ago (personal experience).

Karl’s Peach Jam

Last weekend Eilene’s friends invaded the house for Fanime. This meant peaceful days, but a hungry horde descending upon the house at 10 PM. Eilene asked for fresh crackers as a snack when they arrived. While I was at the farmer’s market I saw some peaches. Peach jam and crackers seemed like just the thing for starving teenagers.

Fanime is this weekend, so we have had a bunch of teenagers camped out on our living room floor. Our usual Sunday dinner got pushed to Memorial Day. Traditionally this holiday means barbecue. Jan asked for tri-tip.

Karl’s Teriyaki Sauce/ Marinade

This sauce goes well with any meat and many vegetables. If you leave out the cornstarch it is also a good marinade. This is my variation of the sauce my mother, Claudia, used in the 1950’s.

Karl’s Kefir, Lime and Mint Sauce

Miriam was specific on what sauces she wanted for her kofta. She wanted a sauce with kefir, mint, and lime. The recipes on-line were either too simple or had way too many ingredients. I wanted something that was cooling, clean, and fresh.

Karl’s Pomegranate Chili Sauce

Miriam was specific on what sauces she wanted for her kofta. When I looked up recipes for pomegranate chili sauce, I did not find any that really appealed to me. I decided to go whole California fusion on this one. I know the kids like Shiracha and two weeks ago Jan and the kids bought some pomegranate syrup. The syrup is already a well balanced sauce, so simply combining the two seemed just the ticket.
