Karl’s Ham Steak with Brandied Peach Sauce

Many weeks I will spend the entire week thinking about and planning Sunday’s dinner.  I have had a rough week—broken car, broken shower, broken refrigerator—and I did not feel I had it in me to plan an elaborate meal ahead of time. A plain ham steak, steamed green beans, a simple coleslaw, and a baked sweet potato would have to do. While this is a meal that started off simply, I got carried away.

Karl’s Green Beans with Balsa Mela Vinegar

I had Stone Soup-ed my plain ham steak for Sunday’s dinner. Simple steamed green beans seemed inadequate. They needed dressing—a bit of butter, green onions and garlic would not be amiss.

Karl’s Broiled Salmon with Lemon Marmalade and Dill

It is a weekday meal and I wanted something simple and quick. I decided on broiled salmon, but how to make it special? I make a lot of marmalades—most of which I give away—but I usually have a few flavors in my kitchen. Today, I chose the lemon and dill goes nicely with lemon.

Karl’s Beech and Oyster Mushroom Stir-fry

Eilene does not like mushrooms. I usually make a separate dish with the mushrooms for everybody else. Today, I am making a slow roasted pork shoulder and thought a mushroom stir-fry with beech and oyster mushrooms would be nice.

Karl’s Chicken in Plum Sauce

I was wondering around Lion Market yesterday, thinking about what I would make for dinner—this is actually my normal state of being. I was looking at the Lee Kum Kee sauces for ones I had not tried yet. I settled on plum sauce.

Karl’s  Cal-South American Empanadas

I am barbecuing Argentinean beef and I wanted some kind of starchy side dish. Although it is from the other end of the South American continent, I suggested Venezuelan arapas—basically a thick corn pancake—but for some reason Jan said “No.” She was more amenable to empanadas—stuffed pocket bread.

Karl’s Chinese Chive Stem and Cucumbers Stir Fry

I was making Asian cabbage rolls and I wanted to serve a vegetable side dish. When I looked at how much Chinese chive stem I had bought, it seemed a bit scant for five people. I had also bought an English cucumber, that I had planned to pickle, but I decided instead to use it to stretch the chive stem.

Karl’s Oyster Mushrooms in Oyster Sauce

Eilene does not like mushrooms. I usually make a separate dish with the mushrooms for everybody else. There are many possible ways to sauce this dish, but today I decided on oyster sauce as the base sauce and then just threw in what pleased me.

Karl’s Barbecued Mulled Port Tri-tip

I decided to barbecue some tri-tip for Memorial Day. I have done this roast many different ways—California Fusion, Sichuan, Salt and Pepper with Green Pepper Sauce, Moroccan, Santa Maria style, Teriyaki, Cajun, and just plain Barbequed. What could I do that was new and different? I looked at some recipes marinating beef in red wine, but they seemed mundane.

Karl’s Oyster Mushrooms and Chive Stems in Black Pepper Sauce

For Miriam’s birthday dinner, she asked for Spicy chicken and pan fried noodles. This is a dish that takes an hour of “mindful” frying and—while it is a wonderful dish—I make it less than my kids would like—like maybe every day. This is a one dish meal by itself, but I decided to add another favorite of Miriam’s and make a mushroom side dish.

Note: I actually used one pound of mushrooms for this dish. It was popular enough that it left people wanting more—even though Eilene would not touch it. I added another half pound of mushrooms to the ingredients list. Continue reading
