Just Miriam is joining us for dinner this Sunday, Chris is off to New York for the week. She is on the Atkins diet, so I still have to adapt my cooking to her desires. She is entering Phase two, so I thought I would make a dhal to go with my chicken curry and palak paneer.

Karl’s Palak Paneer II
Adapted from Sinful Curry
From my research on the web I understand that the difference between Palak Paneer and Saag Paneer is that if you only use only spinach it is a Palak (spinach) and if you use a mixture of green vegetables it is a Saag (greens). The paneer in the title is an Indian cheese with a very high melting point.

Karl’s Greek Spanakorzo Salad (Spinach and Pasta Salad)
I am making some Greek lemon chicken for a weekday meal. I made Spanakorizo (Greek spinach and rice) as a hot side dish last Easter. Today, I want to use the same flavors to make something lighter. This is more a fresh spinach salad with pasta, not orzo with a bit of spinach.

Karen’s Pear Chutney

My sister, Karen, moved to a new home in Port Townsend, WA and there is a pear orchard in the back. In our Christmas exchange this year, I gave her marmalade and she sent me the pear chutney she had made from her crop. We ate it with an Indian dinner I had made and it went very well. I asked for the recipe to share.

Sometimes I have a derth of ideas for what to make for dinner. At times like this, I will type “dinner suggestions” into Google and see what comes up. This search produces lists of recipes with pictures that I can scroll through and think, “No, no, no…maybe?”

Karl’s Simple Mexican Rice

I have made a more complex version of this dish, but today I wanted a simple side dish that would not distract from the star dish, the chicken. Also, half of my diners this week are not eating starch, so it would be wasted effort. I have been trying to make Mexican rice for years with only limited success.

Karl’s Chili Rellenos in a Casserole
Jan has requested chili rellenos to go with my molé chicken this Sunday. A quick look at recipes on-line told me that it is a fussy recipe that has several steps fraught with peril. You have to broil, deseed, and then stuff the chilies without breaking them. Then you have to coat them in a egg batter and deep fry them, still without breaking the chilies or having the coating fall off.

Karl’s Salt and Pepper Cabbage
One of our favorite dishes from a local Chinese restaurant is Salt and Pepper Chicken Wings. I am sure right now you have a picture of heavily salted wings covered in black pepper in your mind. You would be wrong, the peppers in this dish are Jalapeños.

Karl’s Cherry Bruschetta

Jan and I were at our local farmers’ market and Jan spotted a table with piles of free printed recipes. This one appealed to her, so I made it for her. It substitutes cherries for tomatoes, the common base ingredient of brushetta. I took it one step further and used my favorite, Rainier cherries.

Karl’s Blueberry Bran Muffins
Adapted from a Fiber One recipe
Miriam and Chris have gone off carbohydrates and gave us some Fiber One cereal. Earlier this week, Jan looked up a recipe for muffins and I adapted it to our tastes. While I am not a fan of bran, they were actually pretty good. Today, I had some blueberries starting to go bad on the counter and I thought blueberry muffins!
