I did a shepherd’s pie last week and I had this brain storm about an Indian shepherd’s pie, curry topped with cauliflower and potatoes. My guests last week were not into spices, so I put it off. This weekend my family definitely was and here is what I produced.

Karl’s Chicken Pesto with Angel Hair Pasta
A week ago the basil in the garden was beginning to look sad. I harvested what I could and turned it into pesto to preserve it. Jan saw it in the refrigerator and asked for something made with the pesto tonight. I came up with this dish.

Karl’s 40 Clove Garlic Chicken with Mushrooms
It is a constant challenge to make my meals meet all of my family’s food preferences: low fat, keto, soft food, yes mushrooms/no mushrooms, not to mention various allergies. Jan and Eilene just got back from England, so of course they are hungry for anything but British food. Jan requested Mexican food. They had actually had very little chicken while they were traveling, so chicken tacos seem the way to go.

Karl’s Poached Chicken with Cilantro and Lime Farro
“True” Farro (Triticum dicoccum) is a Tuscan wheat. One source I read said that this is the grain that the Roman Legionnaires marched on. It is a marvelous grain to use in any dish that you would normally use rice or barley.

Karl’s Refrigerator Chicken Soup II
I make chicken soup with whatever bits I have in the refrigerator, the backbones and wingtips of chickens, leftover bits of vegetables from other meals. This recipe is never the same twice, because what vegetables go into it depends entirely on what I have on hand. I do try to get a balance of colors, starch and flavors, but it is always different.

Karl’s Asian Chicken or Pork Lettuce Cups
I am still trying to adapt to the combination of low fat and Ketogenic diets of my family. This Sunday I am posting two closely related recipes. This is the original recipe made with Hoisin sauce and sweet chili sauce, both of which have added sugar. I am going to adapt this recipe to be more in keeping with a Ketogenic diet in my second recipe.

Karl’s Jamaican Jerk Chicken
Jan wants Jamaican Jerk Chicken this weekend. Chris, my son-in-law has also mentioned that this would be a good thing. Since I am still trying to reconcile their diametrically opposed diets I will be leaving out the sugar and cooking some of the chicken skin-off and some skin-on.
