With the French girl here every day seems like a challenge meal day. I decided I needed a vegetable side dish to go with my chicken and faro. I have not made Brussels sprouts in a while and Jan really loves them.

Karl’s Celeriac Non-potato Salad
Chris is still on his keto diet and Myr is still on the soft-food diet. Chris is avoiding starches and Myr has been told not to eat salad greens that she would have to chew. As a result, many things that I would normally make of the Fourth of July are off limits.

Normally I use Kraft’s Fat Free Mayonnaise for most things, because of Jan’s diet restrictions. Jan suggested that with the general theme of my blog, “That Fresher is Better,” I should try my hand at real mayonnaise.

Karl’s Italian White Bean Dip
This Sunday we will be going over to the kids’ apartment, so I need to make my dishes transportable. Miriam is still on the soft food diet, so she has asked for bean dip. I think I will make two, a white bean dip and a black bean dip. I was thinking of finding a yin & yang serving dish, but I was not able to find one in time for dinner.

Karl’s Caribbean Black Bean Dip
This Sunday we will be going over to the kids’ apartment, so I need to make my dishes transportable. Miriam is still on the soft food diet, so she has asked for bean dip. My White Bean Dip is a mild, Italian dip. I am thinking the black bean dip should be spicy and Caribbean.

Eilene is having a bunch of her friends over for an overnight. She challenged me to make a Japanese curry. I do not particularly like Japanese curry, but it is for her and her friends.

Karl’s Gobi Musallam Sichuan
My son-in-law was waxing eloquently about Gobhi Musallam. Chris described the dish as a whole roasted cauliflower, an impressive Indian presentation dish, which fits his Ketogenic diet. The recipe is also in-line with the soft food diet that Myr has been put on by her doctor. However, we just had Indian food last week. While I like the idea of a whole roasted cauliflower, there is nothing that says it has to be Indian. What other cuisine could I adapt this technique to?

Karl’s Sloppy Jodhs
To add to the dietary restrictions for this week, Myr was just put on a “soft food diet.” This week’s recipes must be: low(er) fat, low carb, and soft foods. She suggested something like Sloppy Joes.

Karl’s Tofu, Garlic Stem and Lettuce Stem Stir-fry with Pan-Fried Noodles
Yesterday was Daddy’s Day, so I made beef and beans. Today I am paying the price by making a vegetarian meal for Jan and Eilene. After work, Jan usually goes to the gym to work out and de-stress. Depending on which gym she goes to, the session she is attending, and the traffic she can come home anywhere from 6:45 to 7:15. With a stir-fry you can do all of the prep work and then put the dinner on hold, but ready to go, for easily an hour. A quick 10 minutes of stir-frying and a hot fresh dinner is on the table.
