Karl’s British Scones with Currents II

Last week Jan had asked for scones, but I did not hear the request. (Hey! I have medical proof that I am slightly deaf in the range of women’s voices. It’s not my fault!) I woke up today planning to rectify the error. Tomorrow may be Mother’s Day, but today we have British scones.

In a recent Cooks Illustrated, they had a recipe for British scones. I had tied to make these close to the CI recipe a few weeks ago. This week I thought I would be a bit more creative.

Karl’s Raspberry Cream Crackers

When I started making fresh crackers, Jan named them, “Karl Don’t Make These Crackers.” This was not because they were so bad, but because they were so good. These crackers were just too good to leave just laying around tempting you to eat them. I am constantly tinkering with the recipe and I have gone a long way from the original.

Karl’s Italian Sausage Lasagna

Son-in-law, Chris, is leaving on another trip, so the kids are not coming over for Sunday dinner. Jan requested something forbidden by his ketogenic diet, lasagna. Since this is also our anniversary week (31st) I agreed to make it for her. I also made her favorite salad, carrot, to go with it.

Karl’s Chive Stem and Napa Cabbage Stir Fry

Jan has not been home for dinner the last several nights (four conferences in one week). The one night she knew she would be home was Thursday and she asked for steamed fish. This is normally Eilene’s night with her friends, but finals are coming up so she had told me that they would not be coming over. My dinner plan was for steamed fish and stir fried chive stem.

Karl’s Tofu and Oyster Mushrooms

I am making a pepper and salt roast chicken and I wanted a side dish. The kids really like mushrooms so I chose oyster mushroom. The mushrooms are fairly pricey so I am stretching the dish by adding tofu.

Jan requested that I finally figure out how to make dry fried green beans like we get from our favorite restaurants. I have tried making this before with dismal results. The beans have always come out both burned on the outside and raw on the inside.

Karl’s Deviled Eggs Sichuan

One of the benefits of Easter is leftover hard boiled eggs that must be used up quickly. By itself, a plain boiled egg is a bit dry. The solution is to “devil” the dry yoke by mixing it with a wide variety of things.
