Karl’s Georgian Spinach with Eggs and Green Onions

My Georgian feast was lacking in green vegetables. According to Georgian Recipes, spinach is a popular ingredient in Georgian cuisine. This dish sounded good, but of course I was incapable of making it “as written.”

The primary difference between American and British scones is the sugar. British scones do not use it. While I like my scones with a hint of sweetness, I just do not like them cloyingly sweet. I add some sugar, but not a lot.

Karl’s Moroccan Quince and Green Lentil Pilaf

I have some diners who do not eat starch or fruit. In converting my Moroccan oxtail tajine to chicken I have had to deconstruct it to make some of my diners happy. I have moved all of the starch and fruit into this side dish. Green lentils take some time to cook while couscous cooks in no time at all. The trick here is to cook the dried fruit and lentils until almost done and then add more cooking liquid for the couscous.

Karl’s Moroccan Kale and Mushrooms

I usually try to make three dishes for my Sunday feasts. I am trying to work around peoples whose diets are completely at odds with each other. Some diners are starch eaters, other are low or no starch eaters. Some people want lots of meat, others want lots of vegetables. I make three dishes so that everyone may balance their meal to their own satisfaction.

Karl’s Roasted Green Bean Salad

I usually serve a simple green salad when I make cioppino. Today I decided to do something special for Jan’s birthday. I picked up some nice green beans at yesterday’s farmers market. She also likes roasted vegetables and Big Paws Mission Fig balsamic vinegar. I thought I would combine all of these things into a cold salad to go with the fish stew.

Karl’s Orange and Pear Spinach Salad with Lime Vinaigrette

I decided that I needed some greens to go with my salmon and soup that I am serving to my sister. A spinach salad seemed like a good idea, but plain leaves and dressing did not seem like enough. I have been doing a lot of cooking lately and I have several “left over ingredients” on hand.

Karl’s Herbed Barley

I need a starch dish to go with my chicken and pears. Noodles did not seem right. Potatoes or rice did not fit the hole in my head either. Since my dish is sort of French influenced, I had considered couscous to make it a bit Algerian. I tried searching for chicken and pear recipes and found several for soups with barley. That was the one that sounded right.

Pat and Barbara are visiting and I decided that I needed a green veg to go with the chicken and pears that I am making for dinner. Pat wanted Brussels sprouts and Barbara wanted broccoli. Since I have been making a lot of Brussels sprouts lately I sided with Barbara.

Karl’s Roasted Brussels Sprouts and Tomatoes

Since wife Jan is limiting her carb intake I knew that she would want something in addition to a pasta dish. I had bought a tomato, thinking I would add it to my pesto dish, but I changed my mind. I had bought some small Brussels sprouts, one of Jan’s favorite vegetables, at the farmer’s market on Saturday. However, I had only bought a half a pound, not quite enough for a full side dish. Putting these two things together and roasting them seemed like a good idea.

Karl’s Cauliflower and Spinach with Garlic au Gratin

I am making a pot roast this week, but my son-in-law is still on his Ketogenic diet and my wife Jan is also watching her starch intake. These restrictions means that I cannot add potatoes to the roast as would be the normal accompaniment to the savory meat. Man does not live on meat alone, but I know a few who have tried.
